好市发财凤扒金 Braised Chicken Feet, Dried Oysters andMushrooms

材料
炸鸡脚12只、蚝豉12只(浸泡)、香菇12朵(浸泡)、发菜20克(浸泡)、西蓝花1个、蒜蓉6克、洋葱碎6克
姜蓉6克、水1公升、玉米粉+水1比1(勾芡)

调味料
蚝油4汤匙、冰糖20克、黑酱油适量调色

做法
1.预热Midea气压锅,选择“Saute”功能,爆香蒜蓉、洋葱和姜蓉。
2.加入蚝豉与香菇一起爆香(保留浸泡蚝豉与香菇的水备用)
3.除了黑酱油,倒入所有调味料、鸡脚、浸泡过蚝豉香菇的水,以及清水盖过所有材料。
4.盖好,选择“Meat”功能烹煮25分钟。
5.把煮好的鸡脚捞起摆盘。
6.原锅放入西蓝花煮一分钟,捞起摆盘。
7.加入黑酱油调色,放入发菜及勾芡,最后取出淋在鸡脚即可。

Ingredients
12 Fried Chicken Feet,
12 Dry Oyster (soaked),
12 Shiitake Mushrooms,
(soaked and remove stem),
20g Fat Choy (soaked), 1 Broccoli,
6g Minced garlic, 6g Minced Onion,
6g Minced Ginger, 1L Water,
Corn flour + water 1:1 (To thicken)

Seasoning
4 tbsp Oyster Sauce, 20g Rock Sugar,
Dark Soy Sauce To Color

Method
1. Press on Midea Pressure Cooker, use the “Saute” function to heat some oil, sauté the garlic, onion and ginger till fragrant.
2. Add in dried oyster and Shiitake mushroom, stir well. (Reserve the soak water for later used)
3. Toss in seasoning (except for dark soy sauce) and chicken feet, stir well, pour in the soaking water and additional water to enough cover the ingredients.
4. Cover the lid and turn to “Meat” function, cook for 25 minutes.
5. Scoop up the chicken feet and mushroom, arrange on plate.
6. In the same pot, toss in broccoli and continue cook for 1 minute, scoop up and arrange surrounding the plate.
7. Add in black soy sauce to color, thicken with some cornstarch. Lastly toss in fat choy , stir well and pour the sauce over chicken feet, done.
