【周日烘焙】烤甜甜圈Baked Doughnuts

【材料】
温水125毫升、香草精½茶匙、即发酵母2½茶匙、细糖65克、蛋黄2个、普通面粉340克、盐¼茶匙、牛油55克(室温)、奶油60克

【馅料】混合
芝士奶油250克(室温)、奶油60克、糖粉60克、香草精1茶匙、柠檬皮茸绒1粒

【顶料】
细糖100克、桂皮粉2茶匙、溶解奶油30克

【馅料做法】
把所有材料搅拌至细致松发后,装入挤袋里。(图1)

【面皮做法】
1.把清水、酵母及糖混合,待它产生泡沫。(在大热天,这个过程只需10分钟)。
2.在搅拌机里放入面粉、牛油、鸡蛋及盐,搅拌至均匀后加入奶油,以中速搅拌6-8分钟成细滑面团;移至涂油的容器里,覆盖,让它涨发直双倍大(约1至1½小时)。

【做法】
1.在工作台撒少许面粉,把面团擀成½寸厚,然后切出12个圆面皮,排入涂油烤盘里,盖着发酵约30分钟。(图2-4)
2.一旦圈圈面皮涨发,为烤箱选择烧烤、强风及上下火功能,设时10分钟.。
3.以180℃将面团烤至金黄色,待凉备用。(图5)
4.把桂皮粉和糖粉混合。将烤甜甜圈沾溶解牛油,再沾桂皮糖粉。
5.芝士奶油馅料装入挤袋,把钻嘴塞入甜甜圈里,挤入馅料即可。重复步骤至材料用尽。(图6)

【FOR DOUGHNUTS】
125ml warm water, ½ teaspoon vanilla extract, 2 ½ teaspoons instant yeast, 65g castor sugar, 2 large egg yolks, 340g plain flour, ¼ tsp fine salt, 55g butter (at room temperature), 60g cream

【FOR FILLING】combined
250g cream cheese(at room temperature), 60g cream, 60g icing sugar, 1tsp vanilla extract, Lemon zest from 1 lemon

【FOR TOPPING】
100g castor sugar, 2 tsp ground cinnamon, 30g butter (melted)

【METHOD FOR FILLING】
In a medium bowl using an electric mixer , beat all its ingredients until light and fluffy. Set aside, fill into piping bag. (pic 1)

【METHOD FOR DOUGH】
1.In a bowl combine the water, yeast and sugar. Leave to froth. This will probably take 10 minutes on a hot day.
2.In the bowl of a stand mixer fitted with the dough hook, add in the flour, butter, eggs, salt, mixing until even. Add the cream and beat on medium speed for 6 to 8 minutes, or until a smooth sticky dough forms. Remove the dough to a lightly greased bowl, cover, and let rise until doubled in size, about 1 to 1 ½ hours.

【METHOD】
1.On a lightly floured work surface, roll the dough out to about ½-inch thickness. Using a round cookie cutter, cut out 12 rounds from the dough. Place on greased baking tray spacing apart. Cover and let rise until puffy, about 30 minutes. (pic 2-4)
2.Once doughnuts are rised & puffy, select Electric Oven options. Select fan forced oven with top and bottom heating. Set timer to 10 minutes.
3.Bake the doughnuts at 180℃ or until golden brown and puffed. Let cool enough to be handled. (pic 5)
4.In a shallow dish combine the cinnamon and sugar for the topping. Brush each warm doughnut in the melted butter, then coat in the cinnamon sugar.
5.Fill the cream cheese mixture to a piping bag. Insert the tip into the side of a doughnut and squeeze the filling inside to fill. Repeat for the remaining doughnuts. (pic 6)
