九层绿豆糕Lapis Kacang Hijau

【材料】
A:白糖100克、清水125毫升、盐1/4茶匙、班兰叶 2 片(打结)
B:次椰浆500毫升、普通面粉12克、粘米粉15克、栗米粉15克、薯粉15克、盐1/4茶匙
C:绿豆70克、青色素少许
D:清水125毫升
6 寸圆蒸盘 1 个(涂油)
黄色素少许

【做法】
1.把绿豆浸泡 3 小时后加适量水煮至软及干水,取125克待用。
2.把材料A煮溶解成糖浆,熄火。(图 1)
3.把材料B加入煮溶的材料A中,拌成面糊,过滤,分成2份。(图 2)
4.在其中一份面糊加入材料C,然后分成3或4份。
5.另外一份面糊则加入材料D,然后也分成3或4份。
6.准备蒸炉,并把蒸盘涂油,放入蒸炉蒸5分钟。
7.把青色面糊搅拌后倒入热蒸盘里成薄薄一层 ,然后蒸约5-7分钟至凝结。 (图 4)
8.开盖,倒入另一层白色面糊在青面皮上面,然后再蒸5-7分钟。(图 5)
9.重复步骤至面糊用尽,倒最后一层时,先在白色面糊里加黄色素,然后才倒入,让顶层成为黄色。(图 6-8)
10.最后多蒸15分钟即可熄火,置放至少5-6小时候才切块吃。

【Ingredients】
A: 100g sugar, 1/2 cup (125ml) water, 1/4 tsp salt, 2 knotted pandan leaves
B: 500ml thin coconut milk, 120g plain flour, 15g rice flour, 15g corn flour, 15g tapioca flour, 1/4 tsp salt
C: 70g green beans, some green food colouring
D: 125ml water
6” round cake tray(greased)
some yellow food coloring for topping

【Method】
1.Wash and soak green beans for 3 hours. Boil the green beans with sufficient water until beans are soft and tender. Beans should be dry after cooking and weigh 125g.
2.In a small saucepan, bring to a boil ingredients A into syrup, turn off heat.(pic 1)
3.Mix syrup with ingredients B into thin batter, sieve and divide into 2 portions. (pic 2)
4.In one portion, add ingredients C: the 125g cooked beans & green food colouring. Weigh and divide equally into 3 or 4 portions.
5.And the other portion remains plain white, add ingredients D. Divide into 3 or 4 portions.
6.Prepare the steamer and grease tray lightly.Place the tray into the steamer and steam for 5 minutes or till warm.
7.Stir the green batter and pour into warm tray, steam for 5-7 minutes or until firm.(pic 4)
8.Pour the plain batter over the green layer, continue steaming for 5-7 minutes. (pic 5)
9.Repeat layers alternately until the last layer. For the last layer, colour it yellow with some yellow food colouring.(pic 6-8)
10.Steam further for 15 minutes and remove, leave kueh to set aside for 5-6 hours. Slice into desired pieces.
