八宝饭 Eight Treasure Blessing

A:糯米350克、椰浆60克(和60克水混合)、细糖55克、盐 1⁄2 茶匙、芥花油1汤匙、红豆沙60克
1. 把糯米洗净浸泡隔夜,滴干水,放在涂油的盘里,大火蒸20分钟,然后淋入120克的椰浆,
2. 把莲子和白果同碟分开蒸20-25分钟或至熟。(图4)
3. 把红枣和龙眼放入锅里水煮5-6分钟,滴干。(图5)
4. 取一个深碗涂油,把材料B排在底层,铺入少许糯米饭固定。(图6)
5. 接着填入半份的糯米饭,压紧,中间凹陷,填入剩余红豆沙,然后再倒入剩余的糯米饭,压
6. 入蒸笼以大火蒸12分钟,然后倒扣在碟子上即可上桌。(图8)


A: 350g glutinous rice, 60g thick coconut milk (mixed with 60g water), 55g castor sugar, 1⁄2 tsp salt, 1 tbsp canola oil, 60g red bean paste
B:1 piece red cherry, 8 pieces big red dates, 20 pieces soaked lotus seeds, 20 pieces gingko nuts, 2 tbsp red bean paste, 20 pieces dried longan,20g golden raisins, 20g dried cranberries, 1 piece candied tangerine (sliced thinly)
1. Rinse and soak glutinous rice overnight then drain and put rice in a greased container. Steam over high heat for 20 minutes, sprinkle with 120g coconut milk mixture and continue to steam over medium high heat for another 15 – 20 minutes. Stir in sugar, salt and oil while the rice is still hot. (pic 1-3)
2. Steam lotus seeds and gingko nuts separately on the same plate for 20 – 25 minutes or until cooked through. Remove and put aside. (pic 4)
3. Cook red dates and dried longan in a pot of boiling water for 5- 6 minutes. Drain and put aside. (pic 5)
4. Grease a deep bowl with oil and arrange all ingredients B at the bottom of the bowl, adding a little cooked glutinous rice liberally to hold the condiments properly to form a desired pattern. (pic 6)
5. Carefully pace half portion of rice onto ingredients (B), press it tight and make a shallow dent in the centre. Fill the dent with remaining red bean paste. Spread the rest of rice over it and press it tight. Flatten the surface of the rice. (pic 7)
6. Steam for 12 minutes over high heat. Invert the rice on a serving plate. (pic 8)
