参峇海蜇沙拉Jelly fish Salad(Kerabu Jelly Fish)

【材料】
A: 海蜇皮300克
B: 腌芒果(切丝)、小葱头8-10粒(切片)、2汤匙烤花生、1汤匙蓝姜花(切幼)、薄荷叶少许

【参峇辣椒酱材料】
红辣椒8条、指天椒3条峇拉煎40克(烤香)、酸柑汁5-6汤匙、白糖1汤匙、盐1茶匙

【做法】
1.把所有参峇材料研磨成糊,放入冰箱收藏,待用。(图 1)
2.用滚水把海蜇皮烫过,然后在水龙头下冲冷,滴干,切丝。
3.把B料放入碗内混合,然后加入海垫丝及参峇辣椒酱拌匀。(图2-3)
4.即时食用。

【Ingredients】
A : 300g jelly fish
B : 50g pickled mango (juliennes), 8-10 shallots (sliced), 2 tbsp toasted ground nuts, 1 tbsp bunga kantan (slice thinly), small bunch of mint leaves

【Sambal Chilly Sauce Ingredients】
8 fresh red chilly, 3 red bird’s eye chilly, 40g toasted shrimp paste (belacan), 5-6 tbsp lime juice, 1 tbsp sugar, 1 tsp salt

【Method】
1.Pound the sambal chilly sauce ingredients using a mortar, keep in a container in the fridge and use whenever required.(pic 1)
2.Use hot boiling water scald jelly fish in a bowl and drain in a colander with running tap water.Set aside and cut jelly fish into small strips.
3.In a salad bowl, combine grounded sambal chilly sauce, jelly fish and B ingredients, mix well.(pic 2-3)
4.Serve immediately.
