古法豉油皇马草鸡 Premium Soya Sauce Mountain Chicken

【材料】
高山马草鸡1只(或菜园鸡,约1.8公斤)
【香料】
草果80克、八角50克、桂皮50克、陈皮30克、丁香10克、莞荽100克、冰糖1公斤、甘草10克
【调味料】
生抽3 公升、老抽200毫升
【做法】
1. 把鸡只洗净滴干。
2. 准备深锅,把调味料倒入锅里,再加入所有香料。(图1)
3. 大火煮滚后转小火焖煮1½ 小时至汁稠。(图2)
4. 熄火,把整只鸡浸泡在酱汁里30分钟即可。(图3-4)
5. 取出鸡滴干待凉,然后斩件上桌。(图5)

【Ingredients】
1 Mountain feed chicken (about 1.8kg)
【Spices seasoning】
80g Cao Guo, 50g star anise, 50g cinnamon, 30g dried tangerine, 10g clove, 100g coriander, 500g rock sugar, 10g Gan Cao
【Seasoning】
3 liters soy sauce, 200ml dark soy sauce
【Method】
1. Clean and wash chicken, drain.
2. Prepare a deep pot, pour all seasoning into pot, follow with all other spices ingredients. (pic 1)
3. Bring to quick boil and then turn to low heat and simmer for about 1.5 hour until gravy thickens. (pic 2)
4. Off heat, put in chicken and soak for 30 minutes. (pic 3-4)
5. Remove chicken from pot and cool down before cut into pieces to serve. (pic 5)
