堆金积玉 Steamed Precious Gems Egg Custard

【材料】
NutriPlus Omega-3 菜园鸡蛋2粒
【配料】
甜豆4条、西芹20克、松菇20克、红辣椒1条(切丁)、红萝卜½条(全部切丁)
【调味料】
A:盐⅓茶匙、白糖¾茶匙、鸡粉½茶匙、清水200毫升
B:白糖½茶匙、盐½茶匙、蚝油1茶匙、花雕酒1茶匙、清水1 ½汤匙
【勾芡】
粟粉1茶匙+清水1汤匙
【做法】
1. 用干锅把鲜菇炒香后置放一旁。(图1)
2. 在加了盐和糖的滚水川烫红萝卜和甜豆,滴干。(图2)
3. NutriPlus Omega-3 菜园鸡蛋打散后加入调味料A混合均匀,然后过滤。(图3-4)
4. 在蒸笼里蒸空碟至热,然后倒入蛋液。(图5)
5. 加盖以中火蒸3分钟后熄火,让它焖15-17分钟,锅盖必须盖住。
6. 起锅热油,把川烫材料和调味料B迅速炒均,然后勾芡。(图6)
7. 把材料盛出,放在蒸蛋上,即可趁热享用。(图7)

【Ingredients】
2 NutriPlus Telur Kampung Omega-3 Eggs
【Seasoning】
A:⅓ tsp salt, ¾ tsp sugar, ½ tsp chicken stock granules,200 ml water
B:½ tsp sugar, ½ tsp salt, 1 tsp oyster sauce, 1 tsp cooking wine,1½ tbsp water
【Sub-ingredients】
4 sweet snow peas(cut into cubes), 20g celery(diced), 20g shimeiji mushrooms (stem strimmed), 1 red chilli
(cut into cubes), 30g carrot (cut cubes)
【Thickening】
1 tsp cornflour + 1 tbsp water
【Method】
1. Fry shimeiji mushrooms in a dry nonstick wok then dish out and set aside. (pic 1)
2. Blanch carrot, sweet snow peas and celery in boiling water with a pinch of salt and sugar added. Dish out. (pic 2)
3. Beat NutriPlus Telur Kampung Omega-3 Eggs into a mixing bowl, add in seasoning A, mixes well and strain. (pic 3-4)
4. Steam a plate together with water until plate is hot,then pour the egg mixture into the hot plate. (pic 5)
5. Cover the wok and steam over medium heat for 3 minutes, turn off the fire and allow the custard to be
cooked on its own for 15 -17 minutes. Make sure that the wok is covered.
6. Heat a little sesame oil and add blanched vegetables and seasoning B to toss briskly. Drizzle in a little thickening solution. (pic 6)
7. Dish out the precious gems and place it on top of the egg custard. (pic 7)
