干辣老鼠粉 Bonito Flakes & dried Loh Shi Fun

【材料】
老鼠粉300克(烫热水滴干)、猪肉碎80克、盐和胡椒粉各1⁄2茶匙、食油3汤匙、蒜头2瓣剁碎、剁碎烟肉30克、辣椒干4-6条(剪2公分长)、柴鱼片1茶匙、茄子100克(切
丁)
【面料】
A蛋1粒、青葱粒适量、额外柴鱼片
【调味料】
黑酱油1-11⁄2汤匙、蚝油1⁄2汤匙、 酱油1汤匙、清水 1⁄2-3⁄4杯、花雕酒1汤匙、盐适量
【做法】
1. 用盐和胡椒粉腌猪肉碎。
2. 把调味料预先混合在碗里。
3. 在锅内热油,爆香蒜头,加入辣椒干炒一会后加入烟肉、肉碎及茄子拌匀。炒一会后加入柴鱼片和调味料煮滚。(图1-4)
4. 在一个瓦煲内放入川烫好的老鼠粉和肉碎茄子炒料煮至滚,即可试味。(图5-6)
5. 熄火,把鸡蛋加入,盖上。(图7-8)
6. 马上享用,吃时先把半熟鸡蛋搅拌,再撒入青葱及额外柴鱼片。

【Ingredients】
300 g “loh shu fun”(rinsed in hot water and drained,), 80g minced pork meat, 1⁄2 tsp salt & pepper, 3 tbsps cooking oil, 2 cloves garlic(chopped), 30g chopped bacon,4-6 stalks dried chilly(cut into 2cm lengths), 1 tsp bonito flakes, 100 g brinjal(cut into cubes)
【Topping】
1 “Grade A” egg, spring onions(sliced for garnishing), extra Bonito flakes(for garnishing)
【Seasoning】
1-11⁄2tbsps dark soya sauce, 1⁄2 tbsp oyster sauce,1 tbsp light soya sauce, 1⁄2-3⁄4 cup water, 1 tbsp Chinese wine, salt to taste
【Method】
1. Marinate minced meat with salt & pepper, set aside.
2. In a bowl, combine seasoning ingredients & set aside.
3. Heat oil in wok, sauté garlic until light browned, add dried chilly and saute for awhile before adding the bacon, marinated meat, brinjal and give it a stir. (pic 1-4)
4. In a claypot, add “loh shue fun”, bonito flake and seasoning ingredients, fry well. Pour in mince meat and brinjal mixture, Bring to a boil and once meat is cooked and noodles are tender, adjust seasonings to taste.(pic 5-6)
5. Turn off heat, crack an egg & close with its lid.(pic 7-8)
6. Serve immediately by stirring the half cooked egg, garnishing with spring onions, bonito flakes.
