当归猪脚醋 BLACK VINEGAR PIG’S TROTTERS

材料
猪脚850 克( 砍件后川烫1-2 分钟)、老姜550 克( 洗净连皮拍烂)、黑豆25 克( 浸泡2-3 小时)、麻油3 汤匙、 熏蒜头2 大粒、当归10 克, 红枣10 粒、黑醋250 毫升、甜黑醋200 毫升、清水700 毫升
调味料
椰糖100 克、冰糖30 克、酱油50 毫升
做法
1. 把老姜和黑豆用干锅炒1-2 分钟至香。(图1)
2. 加入麻油,继续炒至香。
3. 加入蒜头、当归及猪脚,炒一会。(图2-3)
4. 倒入黑醋、甜黑醋、清水和红枣,煮至滚。
5. 加入调味料。(图4)
6. 转小火焖煮至猪脚软即可。
提示:煮好后让猪脚浸泡数小时后才吃会更入味。

550 old ginger(scrub clean but leave skin on, smashed), 25g black beans(soaked for 2-3 hours), 3 tbsp sesame oil, 2 whole bulbs smoked garlic, 10g tong kwai, 10 red dates,
250ml black vinegar, 200ml sweet black vinegar, 700ml water
Seasoning
100g palm sugar (gula Melaka), 30g rock sugar, 50ml light soy sauce
Method
1.Fry ginger and black beans in dry wok until fragrant for 1-2 minutes.(pic 1)
2.Add sesame oil and continue to fry until fragrant.
3.Add garlic, tong kwai and trotter. Fry for a while.(pic 2-3)
4.Pour in black vinegar, sweet black vinegar, water and add in red dates then bring to the boil.
5.Toss in seasonings. (pic 4)
6.Reduce the heat and simmer until meat is tender.
Tip: It is advisable to allow the vinegar trotters to mature in the sauce for several hours before
eating so that the flavours will develop.
