意式肉丸汉堡包Spaghetti & Meatballs Burger

【意式肉饼材料】可做6-8个
猪肉碎200克、鸡肉碎200克、烟肉50克、生粉2汤匙、鸡蛋1粒、狄绒芥末酱1汤匙、白糖1汤匙、面包糠30克、盐和胡椒粉适量

【配料】
汉堡包6-8个(横切开涂牛油)、蒜香番茄酱(食谱请参考第20页)、番茄、青瓜(切片)、红灯笼椒、芝士片、生菜、Parmesan芝士茸

【意式肉饼做法】
1.把所有肉丸材料混合均匀。(图1)
2.把肉丸分成135-150克重,做成直径8-10公分的肉饼状,然后放入冰箱30分钟。
3.把肉丸饼蒸5分钟,千万别蒸过头。(图2)
4.起锅热少许油,把肉丸饼煎2-3分钟至微黄。(图3)

【组合】
把生菜、青瓜、番茄、灯笼红椒、肉丸饼及芝士片顺序放在面包上,淋上蒜香番茄酱,撒上Parmesan芝士茸,再盖上面包即可享用。(图4-8)

【Meatball Patties ingredients】for 6-8 portions
200g minced pork meat, 200g minced chicken meat,50g minced bacon, 2 Tbsps corn flour, 1 egg, 1 Tbsp Dijon mustard, 1 Tbsp sugar, 30g breadcrumbs, salt & pepper to taste

【Sub-Ingredients】
6-8 burger buns (split & buttered), Marinara sauce [refer to page 20 for recipe] , salad leaf, tomatoes, cucumber, red capsicum, cheese slice, parmesan cheese

【Method】
1.Combine all patties ingredients and mix with damp hands. (pic 1)
2.Roll 135g-150g of the mince mixture into round patties about 8-10cm in diameter, place on a plate. Keep in fridge for 30 minutes to set.
3.Steam patties for 5 minutes. DO NOT over steam. (pic 2)
4.Heat a large non-stick frying pan over medium heat, sear the patties for 2-3 minutes or until brown all over.(pic 3)

【To Assemble】
Place lettuce, cucumber, tomatoes and capsicum slice onburger bun, topped with the pan fried meatball patty, cheese slice, and lastly the marinara sauce. Sprinkle with grated parmesan cheese and cover with the burger bun.Serve immediately with side dishes of your choice.(pic 4-8)
