杯子梅菜素包 Mui Choy Cup Bun

【包皮料】
面粉300克、发粉1小匙、糖30克、酵母11⁄2小匙、葵花籽油2汤匙、水180克
【馅料】
香脆片200克(切碎)、甜梅菜碎150克、冬菇丝100克
【调味料】
生抽1汤匙、黄糖1小匙、素蚝油2小匙、胡椒粉1⁄4 小匙、清
水1⁄2碗、粟米粉1⁄2小匙
【馅料做法】
烧热油1汤匙,加入馅料炒至香,加入调味料拌炒至干,洒上麻油1小匙,拌匀盛起待放至冷后用。(图1)
做法】
1.把全部包皮材料拌均匀,然后加入油搓揉成光滑面团,用湿布盖上待发至双倍大。(图2)
2.将发好的面团再加以搓揉压出空气,分割每份30克。(图3)
3.把皮料包入馅料成包子,放入铺上纸杯的松糕模型中,待发15分钟至光滑,放入蒸笼内以大火蒸8-10分钟。(图4-5)

【Bun ingredients】
300g plain flour, 1 tsp baking powder, 30g sugar, 11⁄2 tsp instant yeast, 2 tbsp sun flower oil, 180g water
【Filling】
200g crispy flakes (chopped), 150g sweet Mui Choy (chopped), 100g shredded Chinese mushroom
【Seasoning】
1 tbsp soy sauce, 1 tsp palm sugar, 2 tsp vegetarian oyster sauce,1⁄4 tsp pepper, 1⁄2 bowl water, 1⁄2 tsp corn flour
【Method for filling】
Heat 1 tbsp oil in wok, sauté all ingredients until fragrant, add in seasoning and stir-fry until dry up, drizzle in 1 tsp sesame
oil and dish out to cool.(pic 1)
【Method】
1.Mixes all bun ingredients and knead into smooth dough, cover with wet cloth and rise until double in size.(pic 2)
2.Punch out the air inside the dough and apportion into 30g each.(pic 3)
3.Wrap each dough with some filling and place into the muffin moulds which lined with paper cups. Let rise again for another
15 minutes; and then steam with high heat for 8-10 minutes. (pic 4-5)
