椰浆饭汉堡Nasi Lemak Burger

【汉堡材料】
白米2杯、椰浆4杯、班兰叶2片(打结)、盐适量

【汉堡配料】
青瓜丝、炸江鱼仔、水煮蛋(切片)

【冷当咖哩汁】
A: 椰浆500毫升(取自1粒椰)、清水500毫升、椰丝40克(炒至金黄色)、黄姜叶1片、疯柑叶3片、盐1茶匙、白糖1汤匙
B: 小葱头8粒( 片)、蒜头3瓣(切片)、香茅3枝(切片)、嫩姜1.5 公分(切片)、蓝姜1.5公分(切片)、黄姜2公分 (切片)、指天椒6条、石古仔3粒、辣椒干10条(浸泡)

【炸鸡材料】
A: 鸡肉500克、生粉1汤匙、黄姜粉1汤匙、白糖1茶匙、盐1茶匙、蛋白1个
B: 玉蜀黍卜脆½杯(捣碎)+ 面包糠½杯+自发面粉½杯

【做法】
1.冷当咖哩:把所有B料放入电动搅拌器研磨至细。
2.将研磨香料炒10分钟,然后加入材料A,焖煮至稠。
3.炸鸡做法:将全部材料A拌匀腌3个小时,然后沾上材料B,跟着收入冰箱,直到用时取出。以热油炸至熟。(图1-3)
4.白饭汉堡做法:白米洗净后放入电饭煲煮成饭。趁热把饭弄松,舀入圆圈模具,铸成汉堡形状,然后收入冰箱让它定型后,煎至两面微黄即可。(图4-5)
5.组合:将米饭汉堡平放碟子上,排入青瓜丝及炸鸡,再淋上冷当咖哩汁;然后叠上荷包蛋及另一块米饭汉堡即可。配炸江鱼仔吃。(图7-8)

【RICE BURGER INGREDIENTS】
2 cups long grain rice, 4 cups coconut milk, 2 knotted pandan leaves, salt to taste

【GARNISHING FOR BURGER】
Cucumber (shredded), fried anchovies, hard boiled egg (sliced)

【RENDANG CURRY SAUCE】
A: 500 ml coconut milk from 1 coconut, 500 ml water, 40 g grated coconut (toasted until browned), 1 fresh turmeric leaf, 3 kaffir lime leaves, 1 tsp salt, 1 tbsp sugar
B: 8 shallots (sliced), 3 cloves garlic (sliced), 3 stalks lemon grass (sliced), 1.5cm young ginger (sliced), 1.5 cm galangal (sliced), 2 cm fresh turmeric (sliced), 6 bird’s eye chilly, 3 pcs candlenuts, 10 stalks dried chilly (soaked)

【FRIED CHICKEN】
A: 500 g chicken fillet, 1 tbsp corn flour, 1 tsp turmeric powder, 1 tsp sugar, 1 tsp salt or to taste, 1 egg white,
B: ½ cup cornflakes crushed + ½ cup breadcrumbs + ½ cup self raising flour

【METHOD】
1.To make rendang curry: Grind all ingredients B with electric blender into paste.
2.Saute the grinded ingredients B for about 10 minutes, add in all ingredients A and simmer till thicken.
3.To prepare fried chicken fillet: Marinate the chicken with its seasoning for 3 hours. Roll the marinated chicken in ingredients B mixture and set aside in the fridge until needed. Deep fry the chicken pieces & set aside. (pic1-3)
4.To cook the rice burger: Wash rice and put all ingredients into an electric rice cooker and cook. Quickly fluff up cooked rice, fill them into ring to form burger shape; keep in fridge to set.Once the rice is set, sear on hot pan until both sides turns brown. (pic 4-5)
5.To assemble: Place the rice patty on plate and top with shredded cucumber and fried chicken, the rendang curry and fried egg. Cover with another rice patty. Serve with crispy fried anchovies on the side. (pic 7-8)
