比利时蓝莓松饼条Blueberry Lattice Bars

【材料】
牛油250克(软化)、白糖1/2杯、鸡蛋1粒、香草精1/2茶匙、中筋面粉2 3/4杯、盐1/4茶匙

【馅料】
冷冻蓝莓3杯、白糖1杯、栗米粉3汤匙

【做法】
1.把牛油和糖搅拌至发起,然后加入鸡蛋和香精,搅拌后加入面粉和盐拌成面团,收入冰箱2小时。
2.另外起锅把蓝莓、糖及栗米粉煮至滚,搅拌约2分钟至稠。
3.把2/3的面团擀成14×10的长方形,然后放入13×9寸的涂油烤盘里,铺上馅料,再把剩余面团擀平,切成1/4寸厚1/2寸宽的长条,以格子交叉方式铺在馅料上面。
4.放进烤炉以190℃烤30-35分钟至金黄色;移到架子上冷却后切成长条。

【Filling】
3 cups fresh or frozen blueberries, 1 cup sugar, 3 tbsps corn starch

【Method】
1.In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 2 hours.
2.Meanwhile, in a small saucepan, bring the blueberries, sugar and corn starch to a boil. Cook and stir for 2 minutes or until thickened.
3.Roll 2/3 of the dough into a 14 inch×10 inch rectangle. Place in a greased 13 inch×9 inch baking dish. Top with filling. Roll out remaining dough to 1/4 inch thickness. Cut into 1/2 inch wide strips, make a lattice crust over filling.
4.Bake at 190°C for 30-35 minutes or until top is golden brown. Cool on a wire rack. Cut into bars.
