沙谷米莲蓉水晶月饼 Sago lotus jello Mooncake

【水晶馅料】
清水150毫升、燕菜精2 1⁄2茶匙、盐1⁄4茶匙、友爱莲蓉150克,椰浆150毫升、栗米粉1⁄2汤匙+ 水2汤匙、红色沙谷米20克
水晶蛋黄9-10个、杯模9-10个
【水晶馅料做法】
1.用滚水煮沙谷米5分钟,熄火,加盖焖它15分钟至煮透,然后在水龙头下冲洗,滴干。
2.把糖、燕菜精及盐放入锅中,然后加入清水慢火煮,不停搅拌。煮滚后加入友爱莲蓉、椰浆及栗米粉水,慢慢搅拌至溶解。(图1-2)
3.煮至滚后熄火,加入沙谷米。(图3)
4.把混合料倒入小杯里,再放入1粒水晶蛋黄在中央,让它凝固。(图4)
【水晶皮料】
清水3 1⁄2杯、白糖140克、班兰叶4片(打结)、燕菜精5茶匙、盐1⁄8茶匙、椰浆2汤匙、青色素少许
【水晶皮做法】
把前面五种材料放入煲里煮滚。转小火,加入其余材料,不停搅拌至起泡。熄火。
【组合】
1.倒1⁄2公分厚的水晶皮料入月饼印中。(图5)
2.让它冷却至几乎凝固时,把一个沙谷米水晶蛋黄放在月饼印中间。(图6)
3.再倒入青色水晶皮料,让它凝固后才收入冰箱。(图7-8)
4.把水晶月饼敲扣出再收入冰箱,随时享用。
【水晶蛋黄材料】
A:清水1⁄2杯、白糖50克、燕菜精1茶匙、班兰叶2片(打结)
B:椰浆1⁄3杯、蛋黄粉1⁄2汤匙、橙红色素1⁄8茶匙
器材:球状冰格
【水晶蛋黄做法】
1.把材料A煮至滚,然后转小火,加入材料B,再煮滚。
2.把水晶料倒入球状冰格,然后压上重物,让它完全凝固后才脱模。

【FillingIngredients】
150g water, 21⁄2 tsp agar-agar powder, 1⁄4 tsp salt, 150g Yu-Ai lotus paste, 150g coconut milk, 1⁄2 tbsp cornflour + 2 tbsp water,
20g red sago pearls
9-10pcs 6cm round tart mould, 9-10 jelly yolks
【Method for filling】
1.Cook sago pearls in boiling water for 5 minutes, turn off heat, cover pot with a lid for 15 minutes until sago pearls are cooked.
Drain in running tap water & set aside.
2.Combine sugar, agar-agar powder & salt, cook over low heat, stirring with a wire whisk.Once mixture comes to a boil, add in
U-Ai lotus paste, coconut milk & corn flour, stirring continuously.(pic 1-2)
3.Bring to a boil and turn off heat immediately. Stir in sago pearls. (pic 3)
4.Pour Sago lotus jelly mixture into small cups and top each cup with a jelly yolk in the center. Allow to set completely.(pic 4)
【Skin Ingredients】
31⁄2 cups water, 140g sugar, 4 pandan leaves(knotted), 5 tsps agar-agar powder, 1⁄8 tsp salt, 2 tbsp thick coconut milk,
green food colouring
【Method for skin】
In a pot bring the first 5 ingredients to a boil. Lower heat and add the rest of the ingredients, stirring continuously with a hand
whisk until the mixture starts to bubble. Turn off heat.
【To assemble mooncake】
1.Pour 1⁄2 cm layer of green jelly skin mixture into a mooncake mould. (pic 5)
2.Allow to cool until almost set.Place a prepared lotus sago filling in the center of the mold.(pic 6)
3.Top up with green jelly skin mixture and allow to set completely before chilling in the refrigerator.(pic 7-8)
4.Unmold green moon cake and keep refrigerated until ready to serve.
【Jelly Egg Yolk Ingredients】
A:1⁄2 cup water, 50g sugar, 1 tsp agar-agar powder, 2 knotted pandan leaves
B:1⁄3 cup coconut milk, 1⁄2 tbsp custard powder, 1⁄8 tsp orangered food coloring Equipment: Ball ice-cube tray
【Method for egg yolk】
1.Bring Ingredients A to a boil, lower heat and add in Ingredients B, bring to a quick boil.
2.Pour jelly mixture into the ball ice-cube tray and cover the tray with a heavy object.Leave jelly to set completely before
unmoulding
