流沙汤圆Tung yuen filled with salted egg yolk cream

【粉团材料】
糯米粉170克、普通面粉30克、糖粉2汤匙、滚水150毫升

【流沙馅料】
咸蛋黄3个、奶皇粉15克、淡奶30毫升、细糖30-40克

【糖水】
清水900毫升、白糖200克、班兰叶4片(撕烂打结)

【馅料做法】
1.把馅料材料放入耐热碗里混合,然后大火蒸10分钟至凝结。(图1-3)
2.把材料从锅取出,用汤匙搅拌,然后再让它冷却,以保鲜膜覆盖。待凝结后分成6克小丸。(图4-5)

【糖水做法】
把所有材料煮滚后转小火煮至糖溶解。

【汤圆做法】
1.把糯米粉,面粉及糖粉混合。慢慢倒入热水,以杓子把粉料搓成面团。(图6)
2.把面团分成10-12克等份,然后包入流沙馅料,搓成汤圆。(图7)3.把流沙汤圆放入滚水中煮至浮起,然后盛入糖水中即可。 (图8)

【Dough Ingredients】
170 g glutinous rice flour, 30 g plain flour, 2 Tbsps icing sugar, 150 ml hot water

【Salted egg yolks custard filling】
3 salted egg yolks, 15 g custard powder, 30 ml evaporated milk, 30-40 g castor sugar

【Syrup】
900ml water, 200 g coarse sugar(or to taste), 4 screwpine leaves, shredded and knotted

【To prepare salted egg yolk custard】
1.Place salted egg yolks, custard powder, evapo-rated milk & sugar in a heat resistant bowl. Steam overhigh heat for 10 minutes or until custard sets.(pic1-3)
2.Remove from heat & using a spoon, mix vigor ous-ly to combine mixture together. Set aside to cool, covered with a cling wrap. Once cool, shape filling into small balls about 6g. (pic4-5)

【To prepare syrup】
In a saucepan, bring to a boil the syrup ingredients.

【To prepare dough】
1.Place the glutinous rice flour, plain flour and icing sugar in a mixing bowl. (pic6)
2.Gradually add hot water & knead into a dough with the help of a spatula. (pic7)
3.Divide the dough into about 10-12g each; flatten and wrap with some custard filling and shape into ball. (pic8)
4.Drop the filled dough into a pot of boiling water & cook until the dough afloats. Remove with a slotted spoon & place into the sugar syrup.
