炸虾枣 Deep Fried Salted Dates

[材料](皮)

糯米粉250克、番薯125克、汀面粉1汤匙、幼糖20克、水适量

[馅料]

叉烧350克、大葱头1粒、蒜茸1/2汤匙、小葱头茸1/2汤匙

[调味料]

叉烧酱2汤匙、蚝油1汤匙、麻油1茶匙、糖1/2汤匙、粟粉水适量(勾芡)

[馅料做法]

1.把叉烧切粒,大葱切粒。

2.烧热2汤匙油爆香蒜茸和小葱头茸,放入大葱粒炒香。

3.加入叉烧粒炒匀并倒入调味料拌炒,最后以粟粉水勾成浓馅,盛出放入冰箱冷冻待用。

[皮做法]

4.把番薯洗净蒸熟至软,去皮搓成泥。

5.把糯米粉、汀面粉及幼糖与番薯泥混合均匀。

6.加入适量水差揉成一软面团,再切成小块。

7.取一块粉团搓圆压扁包入适量馅料,再收口,揉成橄榄核形,以热油炸至浮起呈金黄色,便可捞出沥油。

Skin:

推荐

250g glutinous rice flour, 125g sweet potato, 1 tbsp wheat starch, 20g castor sugar, some water

Filling:

350g Char Siew, 1 onion, 1/2 tbsp chopped garlic, 1/2 tbsp chopped shallot

Seasoning:

2 tbsp Char Siew sauce, 1 tbsp oyster sauce, 1 tsp sesame oil, 1/2 tbsp sugar, some starch for thickening

Method for filling:

  1. Dice Char Siew and onion.
  2. Heat 2 tbsp oil in wok, sauté garlic and shallot until fragrant, toss in onion.
  3. Add in Char Siew and seasoning, stir fry for a while, thicken with starch and keep in fridge.

Method for skin:

  1. Wash and steam sweet potato, and then skinned and mash it.
  2. Mixes glutinous rice flour, wheat starch, castor sugar and mashed sweet potato.
  3. Add in some water and knead into soft dough and then cut into small pieces.
  4. Flatter the dough in round shape and wrap with some filling, fold up and shape like olive and then deep fry until golden brown, drain.
