450g Water melon skin, 200g roasted meat, 4 pcs Chinese mushroom, 1 stalk spring onion, 1 cup stock, 2 pips garlic (smashed)
1 tbsp premium soy sauce, 1 tbsp oyster sauce, 1/2 tsp sugar, 1/2 tsp chicken powder, 1 pinch of salt
1.Soak Chinese mushroom, remove stems and cut into small pieces; cut roasted meat into pieces and cut spring onion into sections.(pic 1)
2.Peel the green skin of water melon and wash; and then cut into wedges.(pic 2-3)
3.Deep fry water melon skin in hot oil briefly; drains.(pic 4)
4.Saute garlic and Chinese mushroom until fragrant; toss in roasted meat and water melon skin.(pic 5-6)
5.Pour in stock and seasoning, simmer until gravy reduced, toss in spring onion and dish out.
