烧肉烩西瓜皮Braised Roasted meat with Water melon Skin

【材料】
西瓜皮450克、烧肉200克、冬菇4朵、青葱1棵、上汤1杯、蒜头2瓣(拍扁)

【调味料】
特级生抽1汤匙、蚝油1汤匙、糖1/2茶匙、鸡精粉1/2茶匙、盐1小撮

【做法】
1.冬菇去蒂浸泡至软,切小块;烧肉切小块;青葱切段。(图1)
2.将西瓜皮青色外皮去除,洗净切成菱形。(图2-3)
3.烧热适量油放入西瓜皮略炸一会,捞出滤油,倾出多余油份。(图4)
4.炒香蒜肉及冬菇,下烧肉炒香,加入西瓜皮拌炒。(图5-6)
5.倒入上汤及调味料焖煮至汁稍干,加入青葱兜匀便可。

【Ingredients】
450g Water melon skin, 200g roasted meat, 4 pcs Chinese mushroom, 1 stalk spring onion, 1 cup stock, 2 pips garlic (smashed)

【Seasoning】
1 tbsp premium soy sauce, 1 tbsp oyster sauce, 1/2 tsp sugar, 1/2 tsp chicken powder, 1 pinch of salt

【Method】
1.Soak Chinese mushroom, remove stems and cut into small pieces; cut roasted meat into pieces and cut spring onion into sections.(pic 1)
2.Peel the green skin of water melon and wash; and then cut into wedges.(pic 2-3)
3.Deep fry water melon skin in hot oil briefly; drains.(pic 4)
4.Saute garlic and Chinese mushroom until fragrant; toss in roasted meat and water melon skin.(pic 5-6)
5.Pour in stock and seasoning, simmer until gravy reduced, toss in spring onion and dish out.
