焦糖蛋糕Kek Gula Hangus

【焦糖材料】
白糖80克、热水1杯、牛油40克

【蛋糕材料】
A蛋4粒、炼奶1/2杯、面粉135克、小苏打粉2茶匙、香草味香精1茶匙
8 X 4寸烤盘(涂油)

【焦糖料做法】
用中火炒糖至溶解,当糖转黄时徐徐加入热水,让糖完全溶解后加入牛油,搅拌至溶解后冷却。(图1-2)

【蛋糕做法】
1.用电动搅拌器把鸡蛋搅拌至发起,然后加入炼奶,搅拌均匀。(图3-4)
2.筛入面粉和小苏打粉,最后加香精。
3.把面糊盖住,让它醒3-4小时成完美海绵状。
4.将面糊倒入烤盘内,然后直接放入烤炉,开电,温度设定在180℃,烤40-45分钟即可。(图5-8)

【Ingredients for caramel】
180g coarse sugar, 1 cup hot water, 40g butter

【Cake Ingredients】
4 eggs “Grade A”, 1/2 cup(125ml) condensed milk, 135g plain flour, 2 tsps soda bicarbonate, 1 tsp vanilla essence
8”x4″ cake tray, greased

【Method For caramel】
On medium heat, fry sugar in a saucepan. When the sugar melts and star to turn brown, add in hot water (be careful, syrup will be popping.) Allow sugar to dissolve then add in butter and stir till it melts. Leave to cool.(pic 1-2)

【To prepare cake】
1.Using an electric mixer, beat eggs till creamy and thick. Add in condensed milk, mixed well. (pic 3-4)
2.Sift in the plain flour & soda bicarbonate, add Vanilla Essence.
3.Leave the mixture in the mixer bowl for 3-4 hours (covered) to get a beautiful ‘sponge’.
4.Pour into the greased tray. Immediately put into a cool oven, then turn the oven ON and bake for 40-45 minutes @ 180C.(pic 5-8)

【Chef s Note】No need to preheat oven, just pour into the cake tin, then turn on the oven.
