猫舌夹心饼干Langue du Chat

【材料】
牛油130克、糖粉125克、蛋白130克、蛋糕粉175克、盐1克、1⁄2个柠檬(取皮茸)、少许红色色素、白色巧克力200克(隔水煮溶)
挤花袋、圆形花嘴(12号挤出夹心饼、8号挤出溶解巧克力)

【做法】
1.把牛油和糖粉搅拌至松发,加入蛋白和柠檬皮茸拌匀。(图1)
2.把粉料和盐筛过,慢慢加入蛋白混合料里。(图2)
3.滴入少许红色素拌匀。(图3-4)
4.以挤袋把面糊挤出, 放入预热至165°C 的烤炉里烤 10分钟,视厚度而定。(图5-6)
5.烤好的饼干凉透后挤入溶解巧克力,再夹一块饼干做成夹心饼即可。(图7-10)

【Ingredients】
130g butter, 125g icing sugar, 130g egg white, 175g cake flour, 1g salt, 1⁄2 pc lemon zest, some food coloring, 200g white cooking chocolate (double boiled)
piping bag and round decorating nozzles tip (no12 for cream butter, no 8 for melted chocolate)

【Method】
1.Cream butter and icing sugar till fluffy. Slowly add in egg white and lemon zest, mix well. (pic 1)
2.Sift flour and salt. Gently fold into the mixture. (pic 2)
3.Add in red coloring and stir to mix.(pic 3-4) 4.Pipe and bake at 165°C for 10 minutes, depend-ing on the size. (pic 5-6)
5.Once cooled down, pipe melted chocolate onto 1 piece and sandwich with another piece.(pic 7-10)
