番薯煎饼Sweet Potato Pancake

【材料】
浅色蕃薯350克、糯米粉80克、薯粉100克、油2汤匙、幼糖1大匙

【馅料】
莲蓉350克

【做法】
1.蕃薯洗净蒸熟至软,去皮压成泥。(图1)
2.加入糯米粉、薯粉及幼糖拌匀,最后拌入食油搓成软面团。(图2)
3.把粉团分切成每个约50克重,包入约30克重莲蓉馅料,搓圆放入饼模中印出花纹 。(图3-5)
4.将蕃薯饼倒扣出来,排入已抹油的蒸盘中,蒸约6-7分钟,取出待凉。(图6)
5.在不沾平底锅中烧热少许油,放入蕃薯饼煎至两面微黄,趁热享用。(图7)

【lngredients】
350g light color sweet potato, 80g glutinous rice, 100g tapioca flour, 2 tbsp oil, 1 tbsp castor sugar

【Filling】
350g lotus paste

【To prepare soup】
1.Wash and steam sweet potato until cooked, peel and mashed.(pic 1)
2.Mixes potato puree with glutinous rice flour, tapioca flour and castor sugar, lastly add in oil and knead into soft dough.(pic 2)
3.Apportion dough to 50g each, and then wrap with 30g of lotus paste, shape round and press into mold.(pic 3–5)
4.Dislodge and arrange sweet potato cake in greased tray, steam for 6-7 minutes, let cool.(pic 6)
5.Heat oil in non–stick pan, sear sweet potato cake until both sides lightly browned, dish out to serve. (pic 7)
