糯米姜鸭Glutinous Rice Duck

焖姜鸭材料
鸭1只、姜片100克、香菇4朵(浸软)、麻油3汤匙、豆
酱3汤匙、蒜茸半茶匙、红辣椒3条
调味料
生抽5汤匙、糖½汤匙、老抽3汤匙、鸡精粉1汤匙
焖姜鸭做法
1 把鸭洗净然后斩件飞水,沥干备用。
2 起锅热麻油,把姜片爆香再加入蒜茸和豆酱炒香。
3 放入鸭肉和香菇翻炒后,加入调味料和适量的水。
4 最后加入红辣椒焖煮45分钟至软即可。(图1)
糯米饭材料
糯米200克(浸泡4小时)
调味料
盐3克、味精4克、砂糖10克、蚝油1汤匙、麻油25克、生抽½汤匙
糯米饭做法
1 把浸泡好的糯米蒸30分钟,和所有调料拌匀备用。(图2-3)
2 准备4小碗,把煮好的焖姜鸭肉放入碗的底部,盖上糯米按平。(图4)
3 把糯米姜鸭拿去蒸30分钟即可享用。(图5)

BRAISED GINGER DUCK INGREDIENTS
1 whole duck, 100g ginger slices, 4 mushrooms(soaked),3 tbsp sesame oil, 3 tbsp soy bean paste, ½ tsp chopped
garlic, 3 red chilies
SEASONING
5 tbsp soy sauce, ½ tbsp sugar, 3 tbsp dark soy sauce, 1 tbsp chicken powder
METHOD
1 Clean and chop duck into pieces; and then blanch in boiling water and drain.
2 Heat sesame oil in wok, saute ginger until fragrant; and then add in garlic and soy bean paste; stir-fry
until aromatic.
3 Toss in duck meat, mushroom and seasoning, follow with some water.
4 Finally, add in red chilis, simmer for 45 minutes or until meat are soften. (pic 1)
GLUTINOUS DUCK INGREDIENTS
200g glutinous rice (soak 4 hours)
SEASONING
3g salt, 4g MSG, 10g sugar, 1 tbsp oyster sauce, 25g sesame oil, ½ tbsp soy sauce
METHOD
1 Steam soaked glutinous rice for 30 minutes; and then mixes with all seasoning. (pic 2-3)
2 Prepare 4 small bowl, put braised duck mixture at the bottom of each bowl, top with glutinous rice and press firmly. (pic 4)
3 Steam the glutinious rice duck for another 30 minutes, done. (pic 5)
