红酒沙白Clams in Red Wine Soup

【材料】
沙白1公斤、姜片10克(切丝)

【调味料】
盐适量、糯米红酒1/2碗

【做法】
1.将沙白以清水盖过面浸泡半小时至吐沙,捞出沥干。
2.煮滚半镬水,放入沙白川烫至开口,捞出沥干盛盘。(图1-2)
3.热油爆香姜丝,加入沙白煮至刚刚熟即可,倒入米酒及少许盐,快速兜匀即可熄火盛出。(图3-6)

【Ingredients】
1kg clams, 10g ginger (juliennes)

【Seasonings】
Dash of salt, 1/2 bowl glutinous red wine

【Method】
1.Clean clams by soaking in water for half and hour, rinse and drain.
2.Boil half pot of water to blanch the clams until their shells opens, drain.(pic 1-2)
3.Heat some oil in wok, sauté ginger until fragrant, add in clams, once just cooked, pour in wine and season with salt, done.(pic 3-6)
