罂粟籽牛油蛋糕 Butter Lemon Poppy seed cake

 

【材料】
牛油250克、盐1⁄2茶匙、细糖350克、A蛋6粒、杏仁粉120克\普通面粉150克筛过)、自发面粉300克(筛过)、发粉1茶匙、罂
粟籽30克、柠檬皮茸1个、橙汁60毫升、牛奶180毫升
9寸圆盘2个(涂油铺防油纸)
【牛油糖霜】
牛油375克(室温)、糖粉750克(筛过)、香草精1茶匙

威化玫瑰花台、挤袋、玫瑰形钻嘴、黄色素少许、白色素少许
【蛋糕做法】
1.把烤炉预热至170℃。
2.用电动搅拌器把牛油,盐及糖搅拌至发起,逐个加入鸡蛋。(图1)
3.加入杏仁粉和其他干料,间隔加入牛奶和橙汁拌匀。(图2)
4.把面糊倒入2个蛋糕盘内,放入烤炉烤35-40分钟,以竹签测试熟度,以不沾物为准。(图3-4)
5.蛋糕冷却后待用。
【牛油糖霜做法】
1.把筛过糖粉和牛油及香草精混合。
2.以电动搅拌器搅拌均匀即可。
【组合】
1.把蛋糕从烘盘里扣出。
2.面层涂上牛油糖霜,喜欢白一点的可加白色素。(图5)
3.叠上另一个蛋糕,整个涂上牛油糖霜。(图6-8)
4.在玫瑰威化台挤出玫瑰形状。把其中少许糖霜加黄色素,装入挤袋,和白色糖霜交替使用,以制造云石效果。(图9-10)

【Ingredients】
250 g good quality butter,1⁄2 tsp salt, 350g castor sugar,
6 “Grade A” eggs, 120 g ground almond, 150g plain
flour(sifted), 300g self raising flour(sifted), 1 tsp baking powder,
30 g poppy seeds, Grated rind of 1 lemon, 60 ml orange juice,
180 ml milk
2×9” round cake pan (lined with greaseproof paper)

【Butter icing Ingredients】
375 g butter(at room temperature), 750 g icing sugar(sifted), 1 tsp vanilla essence
Roses wafer base, Piping bag, Rose nozzle, Some yellow food colouring, White food colouring

【To prepare cake】
1. Pre-heat oven to 170℃.
2. Cream butter, salt, sugar with an electric beater until creamy. Beat in eggs 1 at a time. (pic 1)
3. Fold in ground almonds, with other dry ingredients alternating with milk & orange juice.(pic 2)
4. Pour into 2 lined cake pans & bake in pre-heated oven for 35-40 minutes of until skewer inserted comes out clean.

5. Leave cake to cool before spreading icing.

【To Prepare butter icing】
1. Sift icing sugar into the electric mixer bowl, mix in butter and vanilla essence.
2. Cream with the paddle attachment until icing is just mixed.
【To assemble cake】
1. Unmould the cakes and place one cake on the platter.
2.Spread with some icing. If you want a whiter icing base, add some white food colouring to the base icing.(pic 5)
3.Top with the other cake and cover the whole cake with icing. (pic 6-8)
4.Using some yellow colouring tint some icing and place into the piping bag. Top with some white icing on the other side to create a marble effect.Pipe roses on the rose wafer and place each rose on top of the cake as you go along.(pic 9-10)
