网面皮咖喱鸡Roti Jala with Curry Chicken

咖哩鸡

【材料】
A:鸡肉1-1.2公斤(切小块)、食油1/2杯、马铃薯400克(滚刀切)、浓椰浆500毫升(取自1 1/2粒椰)、清水250毫升
B:八角2粒、丁香3颗、桂皮2寸长

【研磨材料】
小葱头30粒、蒜头4-5瓣、辣椒干20条(剪段浸泡热水至软)、2 汤匙峇拉煎、黄姜3寸、芫荽子4汤匙、小茴香及大茴香各2茶匙

【调味料】
盐3茶匙或适量

【做法】
1.起锅热油,以中低火把B料炒香,接着下研磨料爆香。
2.加入鸡肉,继续炒约15分钟。(图2)
3.加入马铃薯和水,煮至滚后慢火焖至鸡肉和马铃薯熟透。
4 .最后倒入椰浆和调味料,再滚多一阵子至汁稠时才熄火。

网面皮
【材料】
面粉240克、鸡蛋4粒(打散)、椰浆550毫升(取自1粒椰)、盐1茶匙、油1汤匙

【做法】
1.把全部材料拌匀成幼滑面糊,然后过滤。
2.烧热平底锅,抹上一层油,把面糊倒入网模,快速在平底锅上转动,形成一片薄网煎面皮。、(图3-4)
3.当面皮边沿开始卷上时,即可取出卷起或对折成四分一。

Curry Chicken

【Ingredients】
A : 1kg-1.2kg chicken (cut into bite pieces,1/2 cup oil, 400g potatoes(cut into wedges), 500ml santan (from 1 1/2 coconut), 250ml water
B : 2 star anise, 3 cloves, 2″ cinnamon stick

【Ground Ingredients】
30 shallots, 4-5 pips garlic, 20 dried chillγ(cut section, soak to soften), 2 tbsp shrimp paste, 3″ turmeric, 4 tbsp coriander seeds, 2 tsp cumin, 2 tsp fennel

【Seasoning】
3 tsp salt or to taste

【Method】
1.Heat oil in a wok over medium-low heat to saute ingredients B. Then add in grounded ingredients and saute till fragrant.
2.Add in chicken pieces and frγ for 15 mins, stirring continuos.(pic 2)
3.Add in potatoes and water and bring to a boil, simmering slowlγ until chicken is tender and potatoes are cooked.
4.Lastlγ add the santan and salt to taste. Continue to cook until gravγ thickens.

Roti Jala

【Ingredients】
240g flour, 4 eggs (beaten), 550g coconut milk (from 1 coconut), 1 tsp salt, 1 tbsp oil

【Method】
1.Combine all ingredients into smooth batter and sieve.
2.Heat non stick pan and grease with oil, pour batter into pan through mould and shape into net bγ stitch-crossing the batter.(pic 3-4)
3.Roll or fold the Roti Jala into quatered shape and readγ to serve.
