肉碎豆腐 Minced Meat Tofu

材料:

日本豆腐2条、猪肉碎200克、冬菇2朵(浸软切粒)、小葱头50克(切粒)、葱花适量、蒜茸1/2汤匙

调味料:

蚝油1/2汤匙、生抽2茶匙、味精1茶匙、清水150毫升、老抽1/2汤匙、麻油2茶匙、胡椒粉1/2茶匙

做法:

1.将日本豆腐切成数段,用大热油炸至金黄色,沥干油份。(图1-2)

2.挠热2汤匙油炒香蒜茸、小葱茸、香菇粒及肉碎。(图3-4)

3.加入调味料、豆腐焖数分钟至入味。(图5-6)

4.用少许生粉勾芡,洒上葱花即可上碟享用。

2 pkt Japanese tofu, 200g minced meat, 2 pcs mushroom (soaked & diced), 50g chopped shalltot, some chopped spring onion, 1/2 tbsp chopped garlic

SEASONING:

推荐

1/2 tbsp oyster sauce, 2 tsp soy sauce, 1 tsp MSG, 150ml water, 1/2 tbsp dark soy sauce, 2 tsp sesame oil, 1/2 tsp pepper

METHOD:

1.Cut tofu into pieces, and then deep fry in high heat until golden brown, drain. (pic 1-2)

2.Saut’e garlic, shallot, mushroom and minced meat with 2 tbsp of oil until fragrant. (pic 3-4)

3.Toss in seasoning, tofu and simmer for a few minutes. (pic 5-6)

4.Thicken with starch solution and sprinkle chopped spring onion on top.
