脆皮苹果烤鸡丁 Chicken and Apple Crumble

【材料】4人份
鸡全腿1只(去骨切小块)、青苹果2粒(去皮切丁)、粟米油40毫升、大葱60克(剁碎)、新鲜百
里香2束、面粉30克、鲜奶油60毫升、鸡高汤80毫升、少许盐及胡椒粉调味
【酥饼面料】
即溶麦片50克、 面粉50克、咸牛油20克、粟米片10克(剁碎)、Jalapenos芝士茸60克
【馅料做法】
1.在平底锅烧热粟米油,放入鸡肉炒至金黄色,加入葱、百里香及苹果丁,炒至苹果软身。(图

2.加入面粉、鸡高汤及鲜奶油煮至滚,转小火继续焖煮至汁稠。(图4)
3.以少许盐及胡椒粉调味。
【面料做法】
1.将牛油与面粉用手指尖轻轻搓成面包糠状。
2.加入麦片、粟米片及芝士茸捞好,加少许盐调味。(图5-6)
【组合】
1.将馅料填满半碗,上面铺上酥饼碎。(图7)
2.放入烤炉以180℃烤8至12分钟或至金黄色。(图8)

【Filling】
1 pcs chicken whole leg(boneless, thinly sliced), 2nos green apple(skinless and cut into cubes), 40ml corn oil, 60g onion(chopped), 2 sprig fresh thyme, 30g flour, 60ml culinary cream, 80ml chicken stock, salt and pepper to taste
【Crumble】
50g instant oatmeal, 50g all-purpose flour, 20g salted butter, 10g corn flakes(crushed), 60g Jalapenos cheese (grated)
【To prepare filling】
1.Stir fry chicken slices in a hot pan with corn oil till golden brown, add in onion, thyme and apple. Cook till
apple have released all their moisture.(pic 1-3)
2.Add in flour, follow by chicken stock and culinary cream. Bring to a boil, simmer and stir constantly till sauce has thickened.(pic 4)
3.Season to taste with salt and pepper.
【To prepare the crumble】
1.Rub flour and butter using fingertips until mixture resembles coarse crumb.
2.Add in oatmeal, corn flakes and Jalapeno cheese. Lightly season with salt. (pic 5-6)
【To serve】
1.Spoon chicken and apple mixture into oven proof dishes, topped with the crumbs.(pic 7)
2.Bake in oven at 180°C for 8 to 12 minutes or till golden brown.(pic 8)
