蜜椒豆豉加厚骨Fried Spare Rib with Black Farm Bean Honey Sauce

【材料】
加厚骨800克
【配料】
红萝卜100克、西芹100克、大葱100克、桂皮20克、姜1小块、盐和鸡粉适量
【酱汁】
莞荽200克、清水1公升、酱油500毫升、冰糖300克、老抽和黑醋适量
【做法】
1. 加厚骨洗净滴干后下油锅炸至赤色。(图1)
2. 把排骨移到另一个锅里,倒入盖过排骨的水份,并把所有配料切小块加入,大火煮滚后转小火焖煮1½小时。(图2)
3. 与此同时,把莞荽和清水煮至剩一半,然后加入酱油、冰糖、老抽及黑醋,煮至稠即可。
4. 再把排骨翻炸一次至金黄色。(图3)
5. 另外起锅,取适量酱汁,加热后放入炸排骨,兜炒至干身即可。(图4-5)

【Ingredients】
800g pork belly with ribs
【Sub-Ingredients】
100g carrot, 100g celery, 100g onion, 20g cinnamon, 1 small piece ginger, some salt and chicken powder
【Sauce】
200g coriander, 1 liter water, 500ml soy sauce, 300g rock sugar, some dark soy sauce and black vinegar
【Method】
1. Clean and wash pork belly ribs, drain and deep fry with hot oil until light brown. (pic 1)
2. Shift ribs into another pot, pour in water that enough to cover the ribs, cut all sub-ingredients into small
pieces and add into pot, bring to quick boil and then turn to low heat and simmer for 1 ½ hour. (pic 2)
3. At the meantime, boil coriander with water until water reduced to half, add in soy sauce, rock sugar,
dark soy sauce and black vinegar, cook until gravy thicken.
4. Deep fry the ribs again until golden brown. (pic 3)
5. Heat up another wok, add in adequate sauce and toss with fried ribs until gravy dry up, dish out to serve. (pic 4-5)
