蜜香黑椒鸡脚

Honey and Black pepper Chicken Feet

材料
鸡脚10只、咖哩叶1束、芝麻1汤匙(炒香)

腌料
生抽1汤匙、老抽½汤匙、味精1茶匙、盐½茶匙、糖1茶匙

黑椒蜜糖酱
辣椒酱2汤匙、蕃茄酱2汤匙、淅江醋2 ½汤匙、糖2汤匙、 黑糖2½汤匙、生抽1汤匙、黑胡椒碎½汤匙、水1½杯

沾粉
面粉1汤匙

INGREDIENTS
10 chicken feet, 1 stalk curry leaf, 1 tbsp toasted sesame seed

CONDIMENTS
1 tbsp soy sauce, ½ tbsp drak soy sauce, 1 tsp MSG, ½ tsp salt, 1 tsp sugar

SAUCE
2 tbsp chili sauce, 2 tbsp tomato sauce, 2 ½ tbsp black vinegar, 2 tbsp sugar, 2 ½ tbsp palm sugar, 1 tbsp soy sauce, ½ tbsp crushed black pepper, 1 ½ cup water

COATING
1 tbsp plain flour

做法:

1 鸡脚去除鸡爪,洗净沥干,从中间剖开,加入腌料腌制1-2小时。

Trim chicken feet and clean, cut slit from  center and marinate with condiments for 1-2 hour.

推荐

2 把腌制好的鸡脚加入面粉拌匀,放入热油中炸至香脆呈金黄色,捞出沥油。

Coat chicken feet with plain flour and deep fry in hot oil until golden brown, drain.

3 留少许油爆香咖哩叶,倒入黑椒蜜糖酱汁及炸过鸡脚煮至滚后,转小火煮至酱汁浓稠稍干,鸡脚够软

Keep some oil in wok, sauté curry leaf until fragrant, pour in  sauce ingredients and fried chicken feet, bring to boil. Turn to low heat and simmer until gravy reduced and chicken feet soften.

4  盛盘,洒上芝麻便可享用。

Dish out and sprinkle sesame seed before serve.
