西瓜雪耳糖水Double-Boiled Watermelon & White Fungus Fantasy

【材料】
雪耳20克、西瓜200克、杏仁果10克、淮山30克、干无花果3粒、冰糖40克、竹蔗冰糖100克、清水1.2公升

【做法】
1. 把雪耳浸泡至发起,剪小朵备用。
2. 将西瓜切除硬皮,取部分白色皮及红色肉,切成小块。(图1-2)
3. 将所有材料连同冰糖及竹蔗冰糖一起放入炖盅内。(图3-6)
4. 注入清水后开始炖煮1小时。(图7-8)
5. 趁热享用。

【Ingredients】
20g white fungus, 200g watermelon, 10g almonds, 30g wai sun, 3 dried figs, 40g Lump Sugar, 100g Sugar Cane Rock Sugar, 1.2 litre water

【Method】
1. Soak white fungus till soft. Cut into florets.
2. Thinly skin watermelon leaving most of the white part, cut into wedges. (pic 1-2)
3. Combine all ingredients with Lump Sugar and Sugar Cane Rock Sugar in a stew pot. (pic 3-6)
4. Add water and double-boil for 1 hour. (pic 7-8)
5. Dish out and serve hot.
