豆酱冬瓜焖石斑 Braised Garoupa with Winter melon

【材料】

A:石斑4件(每件约80克)、生粉适量

B:冬瓜条150g、蒜片3粒、潮州豆酱1⁄2汤匙、上汤400克

【调味料】

生抽1汤匙、糖1⁄2汤匙、鸡精粉1⁄2汤匙

【做法】

1.冬瓜去皮切幼条备用。(图1)

2.石斑鱼肉沾少许生粉,放入热油炸3分钟至金黄色备用。(图2)

3.烧热锅放少许油,爆香蒜片和豆酱,加入上汤,冬瓜和调味料。(图3-5)

4.再加入炸好的石斑鱼焖三分钟,加少许生粉勾芡即成。(图6-7)

 

【Ingredients】

A:4 X 80g garoupa fillet, some corn flour

A:150g winter melon, 3 pips garlic, 1⁄2 tbsp Teochew soy bean paste, 400g chicken stock

【Seasoning】

1 tbsp soy sauce, 1⁄2 tbsp sugar, 1⁄2 tbsp chicken powder

【Method】

1.Cut winter melon into strips.(pic 1)

2.Coat fish fillet with corn flour, deep fry in hot oil for about 3 minutes or until golden brown.(pic 2)

3.Keep some oil in wok, saute garlic until fragrant, add in soy bean paste, stock, winter melon and seasoning.(pic 3-5)

4.Add in fried fish fillet and simmer in low heat for 3 minutes; thicken with starch and dish out.(pic 6-7)
