酪乳巧克力蛋糕Buttermilk choc chip crumb cake

【牛油顶料材料】
普通面粉100克、黄糖90克、冷牛油85克(切块)、香草精1茶匙

【蛋糕面糊】
牛油115克、盐3⁄4茶匙、白糖100克、B蛋2粒、普通面粉200克、发粉1⁄4茶匙、 苏打粉1⁄2 茶匙、黑巧克力粒100克、酪乳1⁄2 杯(牛奶125毫升+1汤匙柠檬汁)、香草精1 1⁄2 茶匙、柠檬皮茸1个
黑巧克力粒1⁄4 杯(撒面用)、9 X 4寸烤盆(涂油)

【顶料做法】
把面粉和糖拌均匀,加入牛油块,再用刀搅拌,至牛油被切成小粒状。然后加入香精,用手搓至潮湿成糠状即可。

【蛋糕做法】
1.将烤炉预热至170℃。
2.把牛油,盐及糖以电动搅拌器搅拌至发起。(图1)
3.加入鸡蛋再搅拌,然后加入香精。
4.加入筛过的面粉、发粉及苏打粉,间中分两次加入酪乳。(图2)
5.加入巧克力粒和柠檬皮茸。(图3-4)
6.把搅拌好的面糊倒入烤盆里,铺均匀。(图5)
7.把顶料平均撒在面糊上,至盖满表面。(图6)
8.放入烤炉里烤1小时,用竹签测试熟度,以不沾物为准。(图7)
9.取出蛋糕,再撒上巧克力粒,然后再入烤炉烤5分钟,以让巧克力黏在蛋糕上。(图8)
10.让蛋糕完全冷却后才从盆里扣出,切块享用。

【Butter Crumb topping ingredients】
100g plain flour,90g light brown sugar, 85g cold butter(cut into chunks), 1 tsp vanilla extract

【Cake Batter ingredients】
115g butter, 3⁄4 tsp salt, 100g sugar, 2 “grade B” eggs, 200g plain flour, 1⁄4 tsp baking powder, 1⁄2 tsp baking soda, 100g mini bittersweet chocolate chips , 1⁄2 cup buttermilk (or 125 ml milk + 1 tbsp lemon juice), 11⁄2 tsp vanilla essence, zest from 1 lemon /orange
1⁄4 cup mini bitter-sweet chocolate chips(for sprinkling on top of the cake) , 9 x 4” loaf pan

【To make topping】
Thoroughly mix the flour and sugar in a large bowl. Drop in chunks of butter, using a table knife, cut the butter into the flour until it reduces to the size of large pearls.
Sprinkle vanilla extract over, working with fingertips, knead the mixture together until moist, clumpy lumps are formed. DO NOT overmix.

【To prepare cake】
1.Preheat oven to 170℃.
2.Cream the butter, salt and sugar in an electric mixing bowl of a stand mixer until creamy. (pic 1)
3.Beat in eggs and turn off the electric mixer. Mix in the vanilla essence.
4.Add in the sifted flour, baking powder and baking soda with the buttermilk in 2 additions, beginning and ending with the sifted mixture. (pic 2)
5.Stir in chocolate chips and zest.(pic 3-4)
6.Spoon the batter into the baking pan, and spread evenly.(pic 5)
7.Sprinkle the streusel topping evenly on the cake batter, make sure that the whole surface is covered.(pic6)
8.Bake the cake in pre-heated oven, for 1 hour or until a toothpick inserted in the center of the cake turns out clean. (pic 7)
9.Remove the pan from the oven and sprinkle the chocolate chips evenly on top of the baked cake immediately and bake for 5 minutes just to let the chips stick to the top.(pic 8)
10.Let the cake cool completely before lifting the cake out of the pan. Slice and serve.
