长寿面Longevity Noodles

高汤:
鸡壳2副(洗净砍块)、清水2公升、盐适量、胡椒粉1/4茶匙、蒜头2瓣(去皮)

酱料:
鸡高汤1公升、番茄100克(剁碎)、蚝油30克、鸡精粉1汤匙、食油2汤匙、麻油1茶匙、胡椒粉1茶匙、罐头蘑菇1罐、猪肉碎150克(以1茶匙生粉、少许盐和胡椒粉腌过后制成小丸)、虾肉150克、面粉30克(加125毫升清水勾芡用)

面类:
云吞面5-6个、烫青菜少许(随意)

高汤做法:
把高汤材料煮滚,再以小火煮30-45分钟,然后过滤(至少取得1公升高汤)。

酱汁做法:
1.把高汤、番茄、蚝油、鸡精粉、食油、麻油及胡椒粉倒入锅内,煮10分钟。
2.加入肉丸、虾肉及蘑菇。
3.调味后勾芡。

做法:
1.烧开一锅水,烫云吞面约20秒至熟后即可泡冷水,沥干。
2.把面置入碗内,倒入热汤和配料,趁热享用。

Stock:
2 chicken carcasses(cleaned & chopped), 2 litres water, pinch of salt, 1/4 pepper, 2 cloves garlic(peeled kept whole)

Sauce Ingredients:
1 litre chicken stock from above, 100g tomato(chopped), 30g oyster sauce, 1 tbsp chicken stock granules, 2 tbsp cooking oil, 1 tsp sesame oil, 1 tsp ground white pepper, 1 tin button/shitake mushroom, 150g minced pork meat(marinated with 1 tsp corn flour, pinch of salt & pepper, made into small meat balls), 150g prawn meat, 30g plain flour(add 125ml water to make thickening solution)

Noodle:
5-6 wantan noodles, some scalded green vegetables(optional)

Method:
1.Bring stock to boil, then simmer over low heat for 30-45 minutes. Strain stock & set aside.

To prepare sauce:
1.In a wok add in stock, tomatoes, oyster sauce, chicken stock granules, cooking oil, sesame oil & pepper. Boil for 10 minutes.
2.Add in meat balls, prawns meat & mushroom.
3.Adjust seasonings to taste & lastly thicken with thickening solution.

To serve:
1.Bring water to boil in wok & scald wantan noodles for 20 seconds. Blanch noodles in cold water & drain in colander.
2.Place noodles into a bowl, ladle hot sauce over & serve immediately.
