香脆炸鸡脚 Crispy Fried Chicken Feet

材料
鸡脚10只、红罗卜½条(切丝)、大葱头1粒(切碎)、芫茜2
棵(切碎)、柠檬½粒(切片)
腌料
生抽2汤匙、糖½汤匙、盐½茶匙、味精1茶匙、水少许
脆炸面糊
脆炸粉1碗、油3汤匙、水适量
做法
1 鸡脚去除鸡爪,洗净,加入其余的材料及腌料拌匀,腌制2小时以上。(图1-2)
2 把腌好的鸡脚隔水蒸约40分钟,取出待凉。(图3)
3 把脆炸面糊混均匀备用。(图4)
4 将鸡脚裹上面糊,放入热油中炸至香脆便可。(图5-8)

INGREDIENTS
10 chicken feet, ½ carrot (juliennes), 1 onion (chopped),
2 stalks Chinese celery (chopped), ½ lemon (sliced)
MARINADES
2 tbsp soy sauce, ½ tbsp sugar, ½ tsp salt, 1 tsp
MSG, some water
BATTER
1 bowl crispy frying flour, 3 tbsp oil, some water
METHOD
1 Trim chicken feet and mix with the rest ingredients and marinades ingredients, marinade for 2 hours or more. (pic 1-2)
2 Double steam the marinated chicken feet for 40 minutes, let cool. (pic 3)
3 Mixes batter, set aside.
4 Coat chicken feet with the batter and deep fry in hot oil until crispy, done. (pic 5-8)
