鱼翅羹Shark’s Fin Soup

【材料】
鱼翅瓜400克、冷冻蚧肉200克、香菇2朵(浸软,切丝)、玉米浆150克、鸡蛋2粒(打散)、上汤1000毫升、青葱粒适量

【调味料】
浓缩鸡精1茶匙、绍兴酒1汤匙、盐少许、风车粉水适量(勾芡)

【做法】
1.将鱼翅瓜去皮及瓜瓤,放入上汤中以中小火炖煮成丝。(图2-5)
2.加入香菇丝及玉米浆,继续煮2-3分钟。(图6-7)
3.拌入蟹肉和调味料煮滚。(图 8)
4.徐徐注入风车粉水,将汤水调成浓羹,熄火淋入蛋液,撒上葱粒便可。(图9-10)

【Ingredients】
400g shark’s fin melon,200g frozen crab meat, 2 pcs Chinese mushroom (soaked & juliennes), 150g corn cream, 2 eggs (beaten), 1000ml stock, some chopped spring onion

【Seasoning】
1 tsp concentrated chicken stock, 1 tbsp Hua Diao wine, dash of salt, some premium starch for thickening

【Method】
1.Shark’s fin melon skinned and seeded; and then simmers in stock in low heat until melted.(pic 2-5)
2.Add in Chinese mushroom and cream of corn; continue cooking for 2-3 minutes.(pic 6-7)
3.Add in crab meat and seasoning; bring to boil.(pic 8)
4.Slowly thicken with starch; stir in egg sauce and sprinkle chopped spring onion on top and serve.(pic 9-10)
