三文鱼菠菜煎饼Baked Omelette with Tomato & Sausage

【材料】
意大利猪香肠2 条(切片)、甜罗勒叶1把、莫扎里拉芝士碎1/2杯、蕃茄3-4颗(切片)、鸡蛋6颗、洋葱粉1汤匙、胡椒粉1汤匙、海盐1/2茶匙、芫荽适量、椰油1汤匙

【做法】
1 冷油下锅,将切片的猪香肠煎至金黄,起碟,备用。(图1)
2 取一大碗,打入鸡蛋,加入洋葱粉、胡椒粉和海盐,搅拌均匀。(图2)
3 加入猪香肠、甜罗勒叶和芝士碎,拌匀,备用。(图3)
4 取一烤盘,涂抹上一层椰油,接着倒入适量蛋液。(图4)
5 排入蕃茄片, 放进烤箱,以200°C烤约25分钟至表面呈黄金、全熟即可取出,撒上芫荽,切片享用。(图5)

【INGREDIENTS】
2 Italian sausages (sliced), 1 bunch of sweet basil, 1/2 cup grated mozzarella, 3-4 tomatoes (sliced), 6 eggs, 1 tbsp onion powder, 1 tsp pepper, 1/2 tsp sea salt, some coriander, 1 tbsp coconut oil

【METHOD】
1.Heat oil in pan, saute sausages until golden brown, dish out. (pix 1)
2.Blend egg in mixing bowl, and then mixes in onion powder, pepper and sea salt. (pix 2)
3.Add in sausages, sweet basil and grated cheese and mixes well. (pix 3)
4.Grease baking pan with coconut oil, pour in adequate egg mixtures. (pix 4)
5.Arrange tomato slices on top and put into oven, bake at 200°C for 25 minutes until golden brown, remove from oven, sprinkle coriander on top and cut into slices to serve.
