腐乳炒菠菜

Stir-fried Spinachwith Fermented Bean Curd

【材料】
菠菜200克、蒜茸1茶匙、腐乳11⁄2 砖、指天椒碎3条
【调味料】
鸡精粉1⁄2 茶匙、糖1⁄2 茶匙、盐1⁄4 茶匙
【做法】
1. 先烧热2大匙油,爆香蒜茸及腐乳。
2. 接着放入菠菜及指天椒拌炒。
3. 最后加入调味料拌快速拌炒,盛出。

【Ingredients】
200g spinach, 1 tsp chopped garlic, 1 1⁄2 block fermented bean curd, 3 chili padi(chopped)
【Seasonings】
1⁄2 tsp chicken stock, 1⁄2 tsp sugar, 1⁄4 tsp salt
【Method】
1. Heat 2 tbsp oil in wok, sauté garlic and fermented bean curd until fragrant.
2. Toss in spinach and chili padi.
3. Add in seasoning and stir-fry briefly, dish out.

梅子酱蒸鸡

Steamed Chicken with Plum Sauce

【材料】
全鸡腿1只(斩件)、水梅2粒(去核)、红辣椒碎1条、蒜茸1⁄2汤匙、嫩姜茸1茶匙、青葱粒适量(洒面)
【调味料】
酸梅酱2汤匙、蚝油1汤匙、糖1茶匙、麻油1茶匙、粟粉1茶匙、盐1⁄4茶匙
【做法】
1. 将鸡腿洗净沥干水份,加入调味料及其余材料混合拌匀。
2. 移入蒸炉以大火蒸15分钟至熟。
3. 取出,洒入葱花便可。

【Ingredients】
1 chicken whole leg (chop into pieces), 2 pitted plum,1 red chili (chopped), 1⁄2 tbsp chopped garlic, 1 tsp
chopped young ginger, some chopped spring onion forgarnishing
【Seasonings】
2 tbsp plum sauce, 1 tbsp oyster sauce, 1 tsp each ofsugar, sesame oil & corn flour, 1⁄4 tsp salt
【Method】
1. Wash chicken whole leg, drain and marinate with seasoning and all other ingredients.
2. Steam in high heat for 15 minutes.
3. Sprinkle chopped spring onion and serve.

花生鸡脚汤

Peanut Chicken Feet Soup

【材料】
排骨500克、鸡脚3对、花生80克(浸泡)
【调味料】
鸡精粉1茶匙、盐适量
【做法】
1. 将排骨以沸水川烫过洗净,鸡脚去除脚尖。
2. 把花生连同排骨及鸡脚放入汤锅中,并注入水盖过材料盖上。
3. 以大火煮滚后改用小火继续煲2小时至材料够软,调入味料试味便可。

【Ingredients】
500g pork ribs, 3 pair chicken feet, 80g peanut(soaked)
【Seasonings】
1 tsp chicken powder, dash of salt
【Method】
1. Blanch pork ribs and chop off the tips of chicken feet.
2. Place all ingredients in pot, pour in water to cover them, cover with lid.
3. Bring to boil in high heat and then turn to low heat and simmer for 2 hours until soften; season
to taste.

渔香豆腐

Szechuan Tofu

【材料】
水豆腐2砖(切条状)、肉碎60克、榨菜30克(切碎)、蒜茸1茶匙、大葱头1粒(切碎)、红辣椒碎1条、豆酱1茶匙、辣豆瓣酱2茶匙、葱花1汤匙
【调味料]
蚝油1⁄2汤匙、生抽1⁄2汤匙、鸡精粉1⁄2茶匙、糖少许、麻油1茶匙、绍兴酒1⁄2汤匙、水1⁄2碗、粟粉水少许(勾芡)
【做法】
1. 将豆腐抹干水份放入热油中炸至金黄色捞出,沥油待用。
2. 以适量油爆香蒜茸、大葱头碎,加入豆酱和辣豆瓣酱炒香。
3. 放入肉碎拌炒至肉松散转色,加入榨菜碎、辣椒碎及调味料煮滚。
4. 以少许粟粉水勾芡后浇入豆腐上并撒入葱花便可。

【Ingredients】
2 block soft tofu (cut into strips), 60g minced pork meat,30g chopped pickled mustard, 1 onion (chopped), 1 tspchopped garlic,1 red chili (chopped both), 1 tsp soy beanpaste, 2 tsp chili soy bean paste, 1 tbsp chopped springonion
【Seasonings】
1⁄2 tbsp oyster sauce, 1⁄2 tbsp soy sauce, 1⁄2 tsp chickenpowder, dash of sugar, 1 tsp sesame oil, 1⁄2 tbsp ShaoHsing wine, 1⁄2 bowl water, some starch for thickening
【Method】
1. Pat dry tofu and then deep fry in hot oil until goldenbrown, drain.
2. Sauté garlic and onion until fragrant, stir in soy beanpaste and chili soy bean paste.
3. Add in chopped pork meat, stir-fry until loosen andchanged color; add in chopped pickled mustard, red
chili and seasoning, bring to boil again.
4. Thicken with starch and sprinkle chopped onion on the tofu, done.
