东炎香菇蒂松 Tom Yam Mushroom Floss

【材料】
干香菇蒂60克(浸过夜)、油80克、扎蹄100克(切碎)

【调味料】(拌匀)
风柑叶适量(切丝)、豆酱1大匙(磨幼)、东炎酱2大匙、水、糖各2大匙

【配料】(适量)
馒头适量、青瓜适量、番茄适量、生菜适量

【做法】
1.香菇浸过夜后,用搅拌机打碎或捣扁拔丝。
2.烧热80克油,炒香菇蒂,加入扎蹄炒匀,再加调味料,炒至干爽和松软即成。

【小贴士】
如果嗜辣,可加小辣椒。

【Ingredients】
60g mushroom stems(soak over night),80g cooking oil, 100g vegetarian trotter(chopped)

【Seasoning】(mixing)
Some julienne kaffir leaf, 1tbsp soy bean paste(fine), 2tbsp tom yam paste, 2tbsp sugar, 2tbsp water

【Sub-ingredients】
Some plain buns, cucumber, tomato and lettuce

【Method】
1.After soaking the mushroom stems, blend finely in a blender.
2.Heat up 80g of cooking oil, saute mushroom floss until fragrant, then toss in chopped vegetarian trotter and seasoning; stir-fry until dry up and become floss.
