【馒头材料】
香港包粉300克、酵母1茶匙、双倍发粉1茶匙、幼糖1汤匙、白油1汤匙、温水130毫升
【馅料】
五花肉300克、大葱1粒(切圈)、生菜1棵、海鲜酱30克、辣椒酱20克
【调味料】
A:浓缩鸡精1茶匙、老抽1汤匙
B:南乳1砖、五香粉1⁄4茶匙、糖1茶匙、蚝油1⁄2汤匙
【面糊材料】
面粉2汤匙、粟粉1汤匙、蛋白1粒、水适量
【馒头做法】
把全部材料A放入搅拌机以中速搅拌成幼滑面团,取出切割成等份,约每粒重30克,揉圆待发至双倍大,然后移入预热的蒸锅,以大火蒸8分钟至熟即成

【馅料做法】
1.将五花肉搽上调味料A腌2-3小时,然后以油煎至微黄,取出切片。(图2-4)
2.加入调味料B拌匀,然后蒸1⁄2小时,取出待凉。(图5-6)
3.把蒸熟的五花肉沾上面糊,以热油炸至香脆,捞出沥油。(图7)
4.把馒头切半,铺上生菜放入一片香脆花肉、大葱圈,挤入海鲜酱、辣椒酱便可享用。(图8)

【Ingredients for Bun】
300g Hong Kong Flour, 1 tsp yeast, 1 tsp double action baking powder, 1 tbsp castor sugar, 1 tbsp shortening, 130ml warm water
【Filling】
300g pork belly, 1 onion (cut ring), 1 stalk lettuce, 30g Hoisin sauce, 20g chili sauce
【Seasoning】
A:1 tsp concentrated chicken stock, 1 tbsp dark soy sauce
B:1 block red fermented bean curd,1⁄4 tsp 5 spiced powder, 1 tsp sugar, 1⁄2 tbsp oyster sauce
【Batter Ingredients】
2 tbsp plain flour, 1 tbsp corn flour, 1 egg white, some water
【Method for Bun】
Mixes all ingredients into smooth dough, separate into 30g equal portion, let rise until double in size; steam in high heat for 8 minutes.(pic 1)
【Method for Filling】
1.Marinate pork belly with seasoning A for 2-3 hours; then sear with oil until light brown and cut into slices.(pic 2-4)
2.Mixes pork slices with seasoning B and steam for 1⁄2 hour, let cool down.(pic 5-6)
3.Coat the steamed pork belly slices with batter, deep fry until crispy, drain.(pic 7)
4.Halve the steaam bun, sandwich with lettuce, pork belly and onion ring, top with Hoisin sauce and chili sauce, ready to serve.(pic 8)
