乌达酿羊角豆 stuffed lady fingers with Otak – otak

材料 :
羊角豆8条、乌达100克、疯柑叶适量(切丝)
酱料 :
红辣椒3条、虾米1汤匙、小葱头4粒、蒜头3瓣、马来盏1小片
调味料 :
糖1茶匙、味精½茶匙、盐适量、清水适量
做法 :
❶ 羊角豆洗净,用小刀从中间剖开,取出籽。(图1)
❷ 在羊角豆开口处酿入适量的乌达馅,移入蒸锅以中小火蒸5分钟至熟。(图2-3)
❸ 把酱料以少许油爆香,加入调味料、清水及疯柑叶煮至滚,即可淋在蒸熟的羊角豆上即可。(图4-5)

INGREDIENTS :
8 lady finger, 100g otak-otak, some kaffir lime leaves (shredded)
SAUCE :
3 red chilies, 1 tbsp dried shrimp, 4 shallot, 3 pips garlic, 1 belacan
SEASONING :
1 tsp salt, ½ tsp MSG, some salt to taste, some water
METHOD :
❶ Wash lady finger and cut open the centre with a small knife, remove the seeds. (pic 1)
❷ Stuff in otak filling, steam in steamer with medium heat for 5 minutes until cooked. (pic
2-3)
❸ Heat some oil in wok, saute sauce ingredients with seasoning and kaffir lime leaves, add in
water and bring to boil. Pour the sauce over the lady fingers and serve hot. (pic 4-5)
