【材料】
大虾600克(洗净以½茶匙糖醃妥),食油6-10汤匙

【研磨材料】
香茅3枝、蒜头3瓣、黄姜5公分、蓝姜3公分、小葱头25粒、辣椒干12条、(剪段浸泡)、红辣椒3条(切片)、石古仔5粒、峇拉煎1茶匙

【配料】
亚叁膏50克+500毫升清水洗出汁、清水250毫升、亚叁皮3片、黄糖40克、黄梨½粒(去皮眼后切片)、疯柑叶4片

【调味料】
盐2茶匙、白糖1汤匙

【做法】
1. 起锅热油,把研磨材料炒至香。
2. 把配料加入,大火煮滚后转小火焖煮15分钟,间中不停搅拌以免粘镬。(图1-4)
3. 加入虾及调味料,待虾熟透即可熄火盛出。

【Ingredients】
600g large prawns (cleaned + marinated with ½ tsp sugar), 6 – 10 tbsps cooking oil

【Ground Ingredients】
3 stalks lemon grass, 3 cloves garlic, 5cm old turmeric, 3cm galangal, 25 shallots, 12 stalks dried red chilly (cut &soaked), 3 large fresh red chillies(sliced), 5 candlenuts, 1 tsp belachan

【Sub-Ingredients】
50g tamarind paste“assam”+ 500 ml water,250ml water, 3 pieces tamarind peel“assam keeping”, 40g palm sugar, ½ pineapple(skinned & wedged), 4 kaffir lime leaves

【Seasoning】
2 tsp salt, 1 Tbsp sugar

【Method】
1. Heat oil; sauté ground ingredients until fragrant stirring continuously.
2. Add in all sub-ingredients, bring to quick boil and then simmer over low heat, stirring occasionally for 15 minutes before adding prawns & season to taste with salt & sugar. (pic 1-4)
3. Turn off heat once prawns are cooked about 8 minutes.
