什锦腊味松 Assorted Waxed Meat Wraps

【材料】
腊肠1对、腊鸭肉片(蒸熟切丁)、马蹄2粒(去皮切丁)、青、红、黄甜椒各半粒、虾仁150
克、茜芹1支(去除老筋切丁)、油条1码、蒜头2瓣(切片)、生菜1粒(剥片洗净)
【调味料】
蚝油1⁄2汤匙、鸡精粉1茶匙、胡椒粉少许、绍兴酒1汤匙
【做法】
1. 青、红、黄甜椒各切丁;油条剪小片冷油下锅炸脆,压碎备用;虾仁切丁备用。(图1-3)
2. 烧热少许油爆香蒜片至金黄色取出,放入虾仁,炒至转红色盛起备用。(图4)
3. 放入腊肠丁和腊鸭肉爆炒至香,盛起。镬中再下1汤匙油炒青、黄、红甜椒、茜芹丁和马
蹄。(图5-6)
4. 加入调味料、虾仁、蒜片及腊肉料,兜匀即可盛起,用生菜包裹享用。(图7-8)

【Ingredients】
1 pair Chinese sausages,1 pc waxed duck meat (steamed and diced), 2 water chestnut (skinned and diced), 1⁄2 each of green, red & yellow capsicums, 150g shelled shrimp, 1 stalk celery (remove strings and diced), 1 Yau Zha Kuai, 2 pips garlic (sliced), 1 whole lettuce (separate leaves and wash)
【Seasoning】
1⁄2 tbsp oyster sauce, 1 tsp chicken powder, dash of pepper, 1 tbsp. Chinese cooking wine
【Method】
1. Dice green, red & yellow capsicums; Yau Zha Kuai cut small and deep fry in cold oil until crispy and crushed; dice shrimp. (pic 1-3)
2. Heat some oil in wok, sauté garlic until golden brown, dish out, add in shrimp and stir-fry until turns red, dish out. (pic 4)
3. Put in Chinese sausages and waxed duck meat, stir-fry until fragrant, dish out. Add some oil, toss in all capsicums, celery and water chestnut. (pic 5-6)
4. Add in seasoning, return shrimp, garlic and sausage mixture to wok, stir-fry briskly and dish out, wrap with lettuce to serve. (pic 7-8)
