冬炎米粉鱼虾蟹Tom Yam Seafood Mee Hoon

【材料】
肉蟹1只、草虾6只、马鲛鱼头1只、米粉浸软200克(浸软烫熟)、上等草菇6粒(切半)、磨菇6粒(切片)、番茄2粒(切块)、香茅2支、麻疯柑叶5片、亚参片2片、指天椒5条(拍扁)、上汤800毫升

【调味料】
冬炎酱5汤匙、味精1茶匙、鱼露1汤匙

【做法】
1.预先把上汤,香茅、亚参片、指天椒及麻疯柑叶慢火煲至出味约30分钟。(图2)
2.把海鲜处理,洗净后放入香料汤中并加入调味料煮滚,试味。(图3-6)
3.最后加入番茄、草菇和磨菇。(图7-8)
4.把浸软的米粉以沸水川烫沥乾,放入碗中。将煮熟的海鲜连同冬炎汤淋入米粉中享用。

【Ingredients】
1 crab, 6 prawns, 1 mackerel fish head, 200g Mee Hoon (soaked), 6 pc straw mushroom (halved), 6 pcs champignons mushroom (sliced), 2 tomato (cut wedges), 2 stalks lemon grass, 5 sprigs kaffir lime leaves, 2 pcs Asam skin, 5 chili padi (bruised), 800ml stock

【Seasoning】
5 tbsp Tom Yam paste, 1 tsp MSG, 1 tbsp fish sauce

【Method】
1.Boil the stock with lemon grass, asam skin, chili padi and kaffir lime leaves in low heat until flavour infused about 30 minutes.(pic 2)
2.Clean and wash all seafood and put into soup with seasoning and bring to boil again.(pic 3-6)
3.Toss in tomato wedges, straw mushroom and champignons mushroom, bring to boil. (pic 7-8)
4.Scud Mee hoon in boiling water, drain into serving bowl. Pour Tom Yam soup with seafood into Mee Hoon bowl together with all other ingredients.
