冬至吉祥藕圆Lotus Root Dumpling

【面团材料】
嫩莲藕150克、桂花糖1茶匙、幼糖3汤匙、糯米粉150克

【馅料】
豆沙馅150克

【沾料】
混合炒香花生1⁄2碗(研磨成粉)、炒香芝麻2汤匙、幼糖2汤匙

【装饰】
额外嫩莲藕1截(切薄片)

【汤圆做法】
1.将豆沙馅分成小等份搓圆成小丸子待用。(图1)
2.将莲藕去皮洗净,剁细后放入果汁机中磨成茸,取出加入桂花糖及幼糖拌匀。(图2-3)
3.加入糯米粉搓揉成软硬适中粉团,并分成等份,压平后包入豆沙馅搓圆放入冰箱冷冻。(图4-6)
4.煮滚半锅水,将汤圆直接放入沸水中(不需解冻),煮至汤圆浮出水面。
5.将汤圆捞出过冷水沥干,并洒些干生粉待用。
6.起油锅将汤圆放入油中炸至表面呈金黄色即可捞起,沥干油后滚上沾料便可。(图7)
7.用同样的油炸莲藕片至金黄色,沥干摆盘。(图8)

【Dough Ingredients】
150g young lotus root, 1tsp Gui Hua sugar, 3 tbsp cas-tor sugar, 150g glutinous rice flour

【Filling】
150g red bean paste

【Coating】
1⁄2 bowl toasted peanut, 2 tbsp fried sesame seeds, 2 tbsp castor sugar

【Garnishing】
1 block young lotus roof (slices thinly)

【To prepare dough】
1.Divide red bean paste into smaller portion and shape round, set aside.(pic 1)
2.Skinned lotus root, wash and chopped, then blend into puree with blender; mixes with Gui Hua sugar and caster sugar.(pic 2-3)
3.Combine lotus roof paste with glutinous rice flour and knead into dough; apportion equally and wrap each piece of flatten dough with red bean paste filling; keep in fridge.(pic 4-6)
4.Boil half pot of water, boil the dumplings direct from fridge until afloat.
5.Dish out dumpling and soak in cold water briefly, drain and coat with some corn flour.
6.Deep fry the dumpling until golden brown, drain. Coat the dumplings with mixed coating ingredients.
7.Deep fry the lotus roof slices in the same oil until crispy, dish out and drain, arrange on plate with the fried dumplings.(pic 8)
