冰镇洛神咕噜肉Roselle Pork on the Rock

【材料】
猪肉(肉眼)300克、新鲜洛神花150克、大葱半个、红萝卜60克 、姜和蒜各8克、鸡蛋液1/2粒

【调味料】
糖1茶匙、盐1茶匙、绍酒1茶匙

【做法】
1.猪肉切拇指头般大小,以少许盐和蛋浆腌制备用;大葱,红萝卜切片备用。(图1)
2.洛神花取花瓣切细,加半杯上汤用搅拌器搅成浆备用。(图2-4)
3.把腌制过的猪肉粒沾上干生粉以大火炸至金黄色,取出沥干油。(图5)4.热上油锅以小火把姜和蒜爆香,然后倒入大葱和红萝卜以大火炒香。(图6)
5.将炸好的猪肉粒回锅以大火炒匀;再把洛神花浆倒入锅内拌炒。(图7)6.下调味料大火炒匀然后勾芡即可盛起。
7.取一大碗冰粒上桌,将咕噜肉放在冰粒上即可享用!

【Ingredients】
300g pork sirloin, 150g fresh roselle, 1/2 onion, 60g carrot, 8g each of ginger & garlic, 1/2 egg sauce

【Seasonings】
1 tsp sugar, 1 tsp salt, 1 tsp Hua Diao wine

【Method】
1.Cut meat into the size of thumb and then marinate with salt and egg sauce.Cut onion and carrot into slices.(pic 1)
2.Use the bud of roselle and blend into puree with 1/2 cup stock.(pic 2-4)
3.Coat the meat with corn flour and then deep fry until golden brown, drain.(pic 5)
4.Sauté ginger & garlic with some oil in wok, then add in onion and carrot and stir-fry in high heat.(pic 6)
5.Return meat in wok, stir-fry in high heat and then pour in roselle puree and stir to mix.(pic 7)
6.Add in seasoning and thicken with starch.
7.Place ice cubes in a big bowl, top with roselle pork and serve.
