材料
大包菜叶2片、蒜茸1汤匙、
发菜5克(泡软)
馅料
腊肠1对(切粒)
冬菇2朵(切粒)
中型干贝8粒(浸泡,保留汤水)
蚝士5粒(浸泡切粒)
马蹄3粒(去皮切粒)
红萝卜20克(切粒)
白果6粒(去苦心,预先煮软)
莲子6粒(浸泡,预先煮软)
调味料
蚝油1汤匙、生抽½汤匙、鲍鱼汁½汤匙、
水½杯、绍兴酒1汤匙、适量粟粉水勾芡
做法
1.把包菜烫软,滤干后铺放在深碗中备用。
2.发菜以少许上汤和调味料拌匀蒸10分钟,
然后铺在包菜中。(图1)
3.烧热2汤匙油爆香蒜茸,放入腊肠炒香,接
着放冬菇、蚝士。(图3)
4.加入其余配料和调味料拌匀至汁稍干。
5.勾薄芡后淋入绍兴酒拌匀。
6.把煮好的馅料盛入包菜叶中包好,然后以大
火蒸10分钟,取出后倒扣入碟中。(图4-6)
7.用剪刀剪十字形。

 

Ingredients
2 large cabbage leaves, 1 tbsp minced garlic,
5g Fa Cai (soaked)
Filling
1 pair of Chinese sausages (diced)
2 shiitake mushrooms (diced)
8 medium-sized scallops (soaked, keep the water)
5 dried oysters (soaked and diced)
3 water chestnuts (peeled and diced)
20g carrots (diced)
6 pieces ginkgo (remove seeds and boiled soft)
6 lotus seeds (soaked and boiled soft)
Seasoning
1 tbsp oyster sauce, ½ tbsp light soy sauce,
½ tbsp abalone juice, ½ cup water, 1 tbsp Shaoxing wine,
Some cornstarch and water for thickening
Method
1. Blanch the cabbage until soft, drain and place it in a deep
bowl for later use.
2. Mix the Fa Cai with some broth and steam for 10 minutes,
then spread it in the cabbage. (Pic 1)
3. Heat 2 tablespoons oil and saute the minced garlic and
Chinese sausage until fragrant, then add the mushrooms
and dried oysters.(Pic 3)
4. Add the remaining ingredients and seasonings, mix well until
the sauce is slightly dry.
5. Thicken with cornstarch and add in Shaoxing wine.
6. Put the cooked fillings into cabbage and wrapped, then steam
on high heat for 10 minutes.Take out and pour upside down
into a plate. (Pic 4-6)
7. Cut the cross shape with scissors.
