千里追风鱼 Oil Blanched Tilapia

【材料】
金凤鱼700g、姜、大葱碎和蒜茸各1汤匙、清葱粒1汤匙
【酱料】
原粒豆酱1汤匙、清水1⁄2碗、生抽1茶匙、糖1茶匙、粟粉水1
汤匙勾芡
【做法】
1.将鱼洗净,在鱼身斜割几刀,搽上少许盐吸干水份备用。

2.把炸油烧至极热,将鱼投入滚油中,接着熄火;油浸至鱼
熟;捞起沥干油盛盘备用。(图2-3)
3.油锅留少许油,把大葱和蒜茸用慢火炒香,加入豆酱调小
火捞匀后加入清水和剩余调味料。(图4-5)
4.把炒好的酱料,淋在煎好的鱼身上,撒上青葱粒即可拌着
鱼肉同吃!

【Ingredients】
700g Tilapia, 1 tbsp each of chopped ginger, onion & garlic,
1 tbsp年 chopped spring onion
【Seasoning】
1 tbsp whole soy bean paste, 1⁄2 bowl water, 1 tsp soy
sauce, 1 tsp sugar, 1 tbsp corn starch for thickening
【Method】
1. Wash fish and cut a few slits on top, marinate with salt
and pat dry.(pic 1)
2. Heat oil in wok until very hot, put in the fish and turn off
heat, let blanch and simmer until cooked, drain.(pic 2-3)
3. Keep some oil in wok, sauté the chopped ingredients until
fragrant, then toss in soy bean paste and other seasoning.(

4. Pour sauce over the fried fish and serve.
