南瓜挞Pumpkin Tart

【挞模材料】
低筋面粉200克、盐2克、糖粉50克、牛油120克、鸡蛋40克、白巧克力50克(溶解)

【做法】
1.把面粉,糖粉,盐及牛油混合,以手搓揉成粗粒状。(图1)
2.加入鸡蛋,搓成面团状。(图2)
3.把面团捏成挞模状,放入预热至175°C的烤炉里,烤至金黄色。(图3)
4.待冷却后才使用。
5.在挞模涂上溶解白巧克力,以防止挞皮软化。(图4)

【南瓜馅料】
鸡蛋300克、蛋黄25克、白糖375克、南瓜泥150克、牛油200克、燕菜粉2克、鱼胶粉4克、冷水20克、柠檬皮茸1克

【做法】
1.把鱼胶粉放入清水里,搅拌至溶解。
2.除了牛油以外,把所有其他材料混合一起,隔水煮至90°C。(图 5)
3.待混合料温度降至40°C时,加入牛油。
4.以手打器搅拌至发起。
5.把面糊倒入准备好的挞模里。(图6)

【Sweet Pastry Ingredients】
200g cake flour, 2g salt, 50g icing sugar, 120g butter, 40g egg, 50g white chocolate(melted)

Method
1.Combine flour, Icing sugar, salt and butter using rubbingin method. Mix into sandy texture.(pic 1)
2.Add eggs and knead just enough to form dough.(pic 2)
3.Knead the dough into tart ring and bake in preheat oven at 175°C. (pic 3)
4.Allow to cool before using.
5.Brush with some melted white chocolate to prevent the tart from getting soggy.(pic 4)

【Pumpkin curd Ingredients】
300g eggs, 25g egg yolk, 375g sugar, 150g pumpkin puree, 200g butter, 2g agar agar powder, 4g gelatine powder, 20g cold water, 1g lemon zest

【Method】
1.Mix the gelatine powder and cold water to bloom.
2.Double boil all the ingredients in a heat proof bowl over hot water bath (except butter)until 90°C.(pic 5)
3.Add in the butter when the mixture cools down to 40°C.
4.Emulsify with hand blender.
5.Pour into the prepared tart base. (pic 6)
