卤水发财鸡Braised Fortune Chicken

【材料】
全鸡1只

【配料】
莲子15粒(浸泡去心)、白果15粒、香菇3朵(浸泡切丁)、罐头蘑菇4粒(切丁)、红萝卜50克(切丁)、当归2片、枸杞1汤匙

【调味料】
蚝油1汤匙、酱油1汤匙、鸡粉½茶匙、白糖1汤匙、胡椒粉适量、黑酱油适量

【做法】
1. 把鸡里外洗净,然后彻底 抹干。(图1)
2. 用酱油涂抹整只鸡。(图2)
3. 在锅里热1汤匙麻油,把鸡放入锅,将配料铺在鸡肉周围。(图3)
4. 倒入调味料和足以盖过鸡肉的清水,以小火焖煮至鸡熟透即可。(图4-5)

【Ingredients】

【Sub ingredients】
15 pieces lotus seeds (soaked and bitter core removed, 15 pieces gingko nuts, 3 dried Chinese mushrooms (soaked and cubed), 4 canned button mushrooms (cubed), 50g carrot (cubed), 2 pieces tong kwai, 1 tbsp kei chi

【Seasoning】
1 tbsp oyster sauce, 1 tbsp light soy sauce, ½ tsp chicken stock powder, 1 tbsp sugar, Adequate pepper to taste, Adequate thick soy sauce (for colour)

【Method】
1. Clean chicken’s inside cavity. Wash and rinse well. Pat dry completely. (pic 1)
2. Lightly rub some light soy sauce on chicken’s body. (pic 2)
3. Add 1 tsp sesame oil in a wok, place chicken on the saucepot, pour and spread the sub ingredients by the sides of the chicken. (pic 3)
4. Add seasoning, pour in enough water and braise chicken until it is cooked through. (pic 5)
