卤鸡腿Spiced Chicken Drumsticks

【材料】
鸡腿6只、熟鸡蛋5粒(去壳)、蒜茸1小匙

【鸡翼腌料】
蚝油及生抽1汤匙、糖及盐各1小匙、姜数片

【卤料】
卤汁2汤匙、黑酱油1汤匙、绍兴酒2汤匙、酱油1汤匙、水3碗、糖2汤匙

【做法】
1.用腌料把鸡腿腌半小时。
2.先弄热1汤匙油,爆香蒜茸,加入鸡翼快速炒至半熟后,捞起。(图2-5)
3.把半熟的鸡翼移到另外准备好的锅中,加入卤汁料及熟鸡蛋,以慢火煲上半小时即可。(图6-8)

【Ingredient】
6 pcs chicken drumsticks, 5 hard boiled eggs, 1 tsp chopped garlic

【Condiments】
1 tbsp oyster sauce, 1 tbsp soy sauce, 1 tsp sugar, 1 tsp salt, some ginger slices

【Spiced ingredients】
2 tbsp spiced sauce(LU ZHI), 1 tbsp black soy sauce, 2 tbsp Chinese wine, 1 tbsp soy sauce, 3 bowls water, 2 tbsp sugar

【Method】
1.Marinate chicken drumsticks with condiments for 1/2 hour.
2.Heat 1 tbsp oil in wok, saute garlic until fragrant, then add in chicken drumsticks and stir-fry quickly until half cooked.(pic 2-5)
3.Shift half cooked chicken drumsticks to another pot and add in all spiced ingredients and egg, simmer in low heat for 1/2 hour.(pic 6-8)
