参峇虾米炒饭Dried Prawns Sambal Fried Rice

【材料】 白饭300克、食油6汤匙、虾米100克(洗净剁碎)、小葱头3粒(剁碎)、蒜头2瓣(剁碎)、现买参峇酱3汤匙、豆长100克(切片,可以青豆代替)、鸡蛋3粒(加入1茶匙酱油,稍微打散)、胡椒粉1茶匙、盐适量 【酸葱】 大葱2粒(切片)、白醋4汤匙、白糖2汤匙或适量 【酸葱做法】 把所有材料混合调味,然后让它腌30分钟即可食用。 【做法】 1.锅中热油,以慢火把鸡蛋炒熟即可,盛出待用。(图1) 2.用同样的油把葱头和蒜头爆香,加入虾米继续爆香。(图2-3) 3.加入参峇酱,岭慢火炒1-2分钟至出油。(图4) 4.加入白饭,大火炒1-2分钟后,加入长豆,炒匀,下盐和胡椒粉调味。 5.加入炒熟的蛋再炒均。(图5) 6.熄火盛出。吃时配酸葱和黄瓜。 【INGREDIENTS】 300g cooked rice, 6 tbsps cooking oil, dried shrimps (washed & chopped), 3 shallots (chopped), 2 cloves garlic (chopped), 3 heaped tbsps sambal paste (store bought), 100g long beans (sliced, may also use frozen peas), 3 eggs (lightly beaten + 1 tsp light soya sauce), 1 tsp ground white pepper, salt to taste 【PICKLE INGREDIENTS】 2 big onions (sliced), 4 tbsps vinegar, 2 tbsps sugar/to taste 【TO PREPARE PICKLE】 Place all ingredients in a bowl & adjust seasonings to taste. Stand pickle for 30 minutes before using. 【METHOD】 1.Heat oil over low to medium heat, fry egg mixture until just cooked, remove & set aside. (pic 1) 2.Using the same oil over medium heat, saute shallots & garlic till fragrant. Add dried shrimps and fry until oil starts to pop. (pic 2-3) 3.Add sambal paste & saute over low heat for 1-2 minutes or until sambal is dark red in colour & oil separates. (pic 4) 4.Add in cooked rice & stir-fry for 1-2 minutes over high heat. Add in long beans and season to taste with pepper and salt. 5.Toss in cooked egg and stir to mix. (pic 5) 6.Turn off heat & serve fried rice with pickled onions & some cucumber if wish.
